We will take the existing freezer unit out of service and replace it. ( Y) g p We would like too en with the cr ovac products. However, it may take 7-10 days to complete the HACCP with Berger. In the interim, I would like to request your permission to open this week and to sell the following products: 1.) Raw marinated meats and poultry that have been tumbled and are sold out of the "Meat Display" cases by the pound. Also steaks by the pound. 2.) Boar's Head Deli Meats and cheeses by the pound from the Deli Display case. 3.) Pre-packed marinated meats, chicken breasts and turkey tips prepared by Dom's Marinated Meats in Malden Mass. This company sells its products in 45 stores in eastern Massachusetts and it is USDA certified and inspected. I can bring you examples of their product if you would like to see them. An excellent product that is sold in many stores. I would sell these until we have our HACCP approved. These would be sold from the reach in refrigeration unit. 4.) Pre-packed cheese and charcuterie from the Island display unit. This would get us up and running and allow us to complete our HACCP next week and also hire our new employees and get them certified. Also it would help us in retaining the customers who are looking for deli meats and marinated meats. We would need to order product ASAP to open this weekend so please let me know what you think about this interim plan and if it is OK. Many thanks! We'll probably request that for next year but right now we just want to concentrate on selling meats and cheeses here at the store. Michelle came in on Tuesday to do the preliminary inspection. She gave us a list of things to do and we are working hard to get them all done by Monday. We have done a substantial "deep cleaning" of the entire premises. Also, our new sandwich unit arrived today and we have it in place. However, I wanted you to know that we changed the manufacturer from the one we specified on the Food Plan. I will provide you with a copy of the spec sheet on Friday. When Michelle was here on Tuesday, I asked her what the next steps would be and she said that you would 3 issue a letter that would allow us to purchase our products and place them on the shelves for a final review of the food placements. Michelle was very helpful in telling us how to do the food placements in a way that is safe for the consumer. Susan, we are planning on having our annual Grand Wine Tasting on Saturday September 27th and it would be great if we could have our displays full of product and all of our new employees behind the counters serving the customers. I'd really appreciate any help or advice you can give us to achieve that goal. We have removed cauling around the 3-bay and re-caulked. 7.) Rusted Metal shelving is being cleaned, rust removed and painted today. So we are close to complete on all of Michelle's items. I would say the biggest missing piece is the HACCP but I will contact Berger and see what we can do to expedite it. Susan, is it OK to start ordering food...or do I need to wait for a final inspection before we bring in our meats and produce? Please let us know how you would like us to proceed to the next step. I expect that you will be ready and permitted well before that. Michele mentioned that you have additional employees planned to be food safety trained.Wise choice to increase the number of those with the knowledge. Please send us a copy of the certifications once completed. The fee has been reduced based on the catering issue. Renewal time we can review the Vineyard and the Primehouse permits and adjust the fee up or down as needed. When Michelle was here on Tuesday, I asked her what the next steps would be and she said that you would issue a letter that would allow us to purchase our products and place them on the shelves for a final review of the food placements. Please let me know if it was submitted and I am just missing it or please fill out and submit. This is the usual annual application. Please indicate on the form whether you plan on having a catering license. The meat house did have one. The final permit fees will be determined and that will be in the letter.
