This application was found very complete and requires little correction; unfortunately, there are a couple of issues that prevent the issuance of an approval at this time. In response to the application, a walk through was conducted by Health Dept. personnel to determine the overall establishment condition. The proposal is to move equipment to new locations and remove and replace the shelving and cabinetry. It is important that the health office ensure compliance to the food code and provide safe food to the public. This application is the next installment in a series of renovations to the North Andover Dunkin Donut Stores. Previous reviews focused on structural issues that needed some updating and the issue of numbers of sinks. In the Main Street store a compromise was reached with the installation of a dual hand and dump sink. The 733 Turnpike St. store service area has hand sinks in the far corners and a dump in the middle. We agree the dump sink is properly located; however the front entrance corner hand sink is very poorly located and seldom utilized. We would be happy to discuss any ideas you might have, though we believe a solution similar to Main Street should work for all. A double hand sink, using one bay as a dump sink, in the central location, would be an acceptable solution. As in the Main Street discussion, the following rational applies to the new application. 1) A major key to serving safe food is segregation of use. Each hand sink is designated for hand wash only and cannot be used for other needs. 2) You can never have enough hand sinks. 3) Each food service, ware washing and preparation area must have a hand sink within reasonable access without obstruction. Generally within ten (10) feet. Dunkin Donuts July 14, 2011 4) Without the benefit of a dump sink near by, spill troughs are agreeably a good solution to quick needs on the line during service, however, they do not meet the food code definition of a hand sink. Having them in place does allow for Health Departments to not require a hand sink on the front line where otherwise warranted. Other than the issue of the hand sinks, the application was found very complete and the walk through recently found only a few structural items which need addressing. These can be found below. This application was found very complete and requires little correction; unfortunately, there are a couple of issues that prevent the issuance of an approval at this time. In response to the application, a walk through was conducted by Health Dept. personnel to determine the overall establishment condition. The proposal is to move equipment to new locations and remove and replace the shelving and cabinetry. It is important that the health office ensure compliance to the food code and provide safe food to the public. This application is the next installment in a series of renovations to the North Andover Dunkin Donut Stores. Previous reviews focused on structural issues that needed some updating and the issue of numbers of sinks. In the Main Street store a compromise was reached with the installation of a dual hand and dump sink. The 733 Turnpike St. store sei vice area has hand sinks in the far corners and a dump in the middle. We agree the dump sink is properly located; however the front entrance corner hand sink is very poorly located and seldom utilized. We would be happy to discuss any ideas you might have, though we believe a solution similar to Main Street should work for all. A double hand sink, using one bay as a dump sink, in the central location, would be an acceptable solution. As in the Main Street discussion, the following rational applies to the new application. 1) A major key to serving safe food is segregation of use. Each hand sink is designated for hand wash only and cannot be used for other needs. 2) You can never have enough hand sinks. 3) Each food service, ware washing and preparation area must have a hand sink within reasonable access without obstruction. Generally within ten (10) feet. t' Dunkin Donuts July 14, 2011 4) Without the benefit of a dump sink near by, spill troughs are agreeably a good solution to quick needs on the line during service, however, they do not meet the food code definition of a hand sink. Having them in place does allow for Health Departments to not require a hand sink on the front line where otherwise warranted. Other than the issue of the hand sinks, the application was found very complete and the walk through recently found only a few structural items which need addressing. These can be found below. A simple response of how you will address each item along with the resolution of the hand sink issue will result in the Health approval and the Building application sign off.
