Installation - The walk-in refrigerated rooms shall be installed in 7" deep ID recesses (below finished floor). Recess
depth allows 1" for use of leveling sand; 4" for the insulated floor panels; 2" for finished floor and setting bed
which shall be carried in from the adjacent room and level to same. The finished floor and setting bed shall be
furnished and installed by the General Contractor, and shall have coved joints at all walls, turned up a
minimum of 3". The unit shall be set level on a bed of clean, dry mason's sand. Shims are not acceptable for
leveling material.
Construction - All standard construction modified to meet all of the specific following points:
• Polished hardware (hinges and latch to match)
• Three hinges on doors
• Dial type thermometers at doors
• NSF construction throughout with exception of buried floor panels
Minimum materials -Interior and exterior wall surfaces shall be clad with .038" pebble finished aluminum The
ceiling shall be finished in white polyester over 24 gauge galvanized steel. Interior floor shall be 14 gauge
galvanized steel.
Accessories - Freezer shall be provided with an electrically heated pressure relief port. Each door shall be provided
with a heated vision panel, 14" x 24", constructed of three panels of tempered unbreakable glass, electrically
heated, with sealed air spaces between. Provide matching trim strips and closure panels to adjoining surfaces,
fabricated per details, made of largest pieces available to minimize number of joints, and installed in accordance
with NSF Brochure 770202, Installation Manual for Walk-in Refrigerators and Freezers. Provide two total
extra light fixtures for mounting in the cooler and deliver to Electrical Contractor for field installation.
Guarantee - The walk-in refrigerated room panels shall be guaranteed for a period of ten (10) years from the date of
approved installation for defects in materials and workmanship when subjected to normal use and service;
remainder of rooms for one year.

trough, storage container, and hanger brackets. Provide all materials necessary for the hanging of the ventilator,
and seal to walls.
Accessories - Provide unit with eight UL Listed incandescent light fixtures factory prewired and left ready for final
connection by the Electrical Contractor. Provide closure trim per detail to a point 3" above finished ceiling to
close to adjacent surfaces on three sides.

anchors for the griddle's rear legs. Cutting board shall be fabricated of 16 gauge stainless steel with all edges
formed in channel shape and supported on two extended legs, welded to 14 gauge inverted channels at the top
and sized to permit a tight fit when the board is placed over them. Uprights must be carefully spaced to permit
easy removal of the griddle grease drawer.

The following construction specifications are to further amplify the material contained in the General Construction
specifications contained hereinbefore.
TOPS: 14 gauge stainless steel with front and ends turned down 3" and corners welded. Rear faces shall be formed
in a 2" high channel shaped turn down Top shall be reinforced with angle frame with care taken to support
heavy items. Specified square and rectangular cut-outs in the counter top shall be flanged down with corners
filled and welded Round and other speed cut-outs shall be left raw, and ground for safe edge. Counter top
shall be 36" above finished floor.
BASE CABINET CONSTRUCTION: 18 gauge stainless steel of box type construction with sanitary closed
reinforced base resting on and secured to a levelled on a 14 gauge galvanized steel channel base, sized to be
installed on a level sub -floor provided by the General Contractor, resulting in 6" clearance above finished floor.
Front and end panels shall close to 4" above floor. The channel base shall be configured to avoid enclosing
floor drains in inaccessible locations. Finished floor and tiled riser shall be installed by the General Contractor
after the counters are installed

UNDERSHELVES: 16 gauge stainless steel with reinforcing and sound deadening as specified for open base table
undershelves. Front face shall be turned down 1-1/2" and in 1/2" at 450. Rear and ends shall be turned up I-
1/2" and comers welded.
SKELETAL FRAMING: Base cabinets specified with skeletal framing shall consist of angle framing or COMA
formed 14 gauge sections with accessible center sections in lieu of stainless steel cabinets, with air spaces and
finish applied as specified
TRAYSLIDE: Trayslide shall be sized per plan, 11" deep, and set at 33" above floor, top of ribs at 33-18" above
floor. Mount trayslide 1' off face of counters. Trayslide shall be fabricated of 1/2" thick Corian, single color,
as selected by Architect, and include finished front, ends and suitable substrate, and mounted on stainless steel
brackets per elevation. Brackets shall be laser cut 11 gauge stainless steel, shaped per detail, deburred and
welded to similar mounting plates, and polished to original #4 finish. Secure to front panels with three
polished round head stainless steel fasteners. Imbed three full length 1/8" x 3/8" stainless steel strips in the
solid surfacing, protruding 1/8" above surface, starting at 2" point from extreme ends with rounded exposed
ends.
FINISH PANELS: Front and ends of counter shall be provided with pan shaped stainless steel wrapped 3/4" thick
plywood panels with tight joints on the face, 45° joints on exposed corners so that joint is on the actual corner.
Panels shall be secured to the structure from the rear. All panels shall have vertical grain.
HINGED DOORS: Double pan stainless steel as specified in General Construction. Doors shall be provided
WITHOUT handles. Ventilated doors located within the serving area shall be provided with die formed drip -
proof louvers covering maximum possible area.
REAR APRON: Apron shall be provided per elevations, fabricated of 18 gauge stainless steel, and shall be used to
conceal drop-in equipment, and for the mounting of switches, outlets, and controls. Apron height shall be 10"

PART 3 - EXECUTION
SANITATION REQUIREMENTS
Equipment specified herein shall be fabricated to conform to the "Food Service Equipment Standards" of the
National Sanitation Foundation prepared by the Committee on Food Service Standards, and published by the
National Sanitation Foundation, Ann Arbor, Michigan Any differences of opinion on sanitation shall be referred to
the State Department of Health for a ruling.
Equipment shall be installed in accordance with the manufacturer's instructions and the best practices of the food
service industry, with careful attention to eliminating all cracks, crevices and concealed spaces in wet areas that
would be difficult to clean or keep free of vermin and soil.
EXAMINATION AND ACCEPTANCE
Determine whether the General Contractor will furnish and provide temporary power and light, openings and storage
space to permit scheduled delivery of equipment. Verify water pressure and provide necessary reducing valves.
Examine space in which specified work is to be installed to assure that conditions are satisfactory for the installation
of specified work. Report in writing to the Architect, any deficiency in the work of other contractors affecting
speed work. Commencement of speed work shall be construed as acceptance of space conditions.
Obtain and verify all measurements and conditions on the job, and assume responsibility in respect to same.
Inspect flooring and raised concrete bases, wall finishes, painting, ceiling installation and all related work for
readiness to commence installation of foodservice equipment. Verify the existence of required mechanical and
electrical rough -ins.
CLEANING UP
Debris and surplus materials resulting from installation work shall be removed promptly as work progresses, to a
location indicated by the General Contractor.
Following completion, and before final acceptance by the Owner, clean finished surfaces in accordance with the
manufacturer's instructions, and leave speed work free of imperfections.
DEMONSTRATION AND OPERATING INSTRUCTIONS
Before final acceptance, and by appointment with the Owner and his representatives, completely demonstrate with
power, the correct operation of each new item of operating equipment.
Prior to the demonstration, turn on all mechanical and electrical foodservice equipment. Test for leaks, poor
connections, and inadequate or faulty performance and correct if necessary. Adjust for proper operation
Thermostatically controlled equipment and equipment with automatic features shall be operated for a sufficient
length of time with proper testing equipment to prove controls are functioning as intended. Recalibrate thermostats
if necessary.
Provide Architect or Consultant with a loose leaf bound manual of operating data and maintenance instructions
containing complete description, wining diagrams, operating data, maintenance requirements and other information
pertaining to the proper operation and upkeep of the various items of electrical or mechanical equipment. Include

names, addresses and telephone numbers of authorized service agencies for all items. Arrange all material in
alphabetical order by Manufacturer. Book shall be turned over to Owner after review and approval.
Submit guarantees and warrantees to the Architect in the above specified manual with all warranty cards completed
and becoming effective at the time the equipment was satisfactorily demonstrated.
PROTECTION OF WORK
Protect specified work from damage during transportation to the project site, storage at the site, during installation,
and after completion until acceptance by the Owner.
Protect adjacent work under other contracts during installation until completion of specified work. After
completion, the contractor for other work shall be responsible for the protection of his work until acceptance by the
Owner.
Damaged work as determined by the Architect, shall be repaired or replaced as determined by and to the satisfaction
of the Architect.
EXISTING EQUIP .NT
Foodservice equipment that is scheduled for reuse shall be removed and stored in a location provided by the General
Contractor on site. This Contractor shall provide transportation of equipment.
Verify and document the operating condition of all relocated equipment prior to its being disconnected. Document
the condition of the equipment to note any dents, scratches, broken components or other damage prior to placing it
in storage. Protect equipment during transport and storage, and assume responsibility for its re -installation in the
condition viewed prior to removal. Transport and install the equipment in accordance with Item Specifications.
This Contractor is not responsible for refurbishing equipment noted as "Existing" on plans or specifications unless
work is specifically called for in the Item Specifications.
Disconnecting and reconnecting of services to "Existing" equipment shall be performed by related trades.
This Contractor shall not provide a warranty or guarantee on "Existing" equipment. In the case of a new
component being provided by this Contractor for an "Existing" piece of equipment, the component shall be
warranteed or guaranteed as specified hereinbefore.

Dear Ms. Condon;
In reference to your letter dated October 10, 2002 addressed to W. Paul Newton noting
Brooks School Ice Arena infractions on October 6, 2002, pursuant to 105 CMR 675.007-
8-9-10 of the Massachusetts Department of Public Health Bureau of Environmental
Health Assessment, long term corrective measures were implemented on October 7b and
8" 2002.
Corrective Measures
1. On September 7h and exhaust port was installed through an exterior wall in
the Zamboni Room. The Rink Attendant was directed to close the exterior
door to the Zamboni room, connect the exhaust from the Zamboni to the new
exhaust port with a rubber automotive exhaust hose, then start the Zamboni
and run it five to ten minutes to warm up the catalytic converter prior to
moving the Zamboni into the Rink proper.
2. Before entering the Rink with the Zamboni the large building exhaust fan
must be turned on and left running until five minutes after the Zamboni has
left the rink proper and the motor is shut off.
3. As far as record keeping the Rink log has been updated with the current ice
resurfacing equipment tune-up and emissions test, which was, accomplished
8/6/2002 (copy enclosed), and unfortunately never entered in the log.
Since the incident of October 6, 2002 all our air quality tests have been conducted in
keeping with the regulations and the readings have been within normal and acceptable
limits
I believe we have corrected the discrepancies noted in you letter and I welcome any
comment and or inspection from any local or state authority.
