I am writing in follow-up to my eighth and final inspection of Harrison's Roast Beef, which took place on
Wednesday, January 5, 2010.
We did not observe any critical issues during this audit. However, we are still trying to figure out the best
way to ensure that non-food contact surfaces are cleaned in a timely manner.
To that end, Michael and I are scheduled to meet next week to discuss the final draft of the cleaning
schedule. I would like to give them an extra week to implement the changes that come of that meeting.
We will then meet one more time to compile a list of actions they have taken since the beginning of our
time with them, along with a list of any outstanding issues. That final summary will be sent to you by
January 29, 2010.
At that time, we will also determine if they are ready to dispense with our services. Should that be the
case, I plan to inform you of that decision in that final summary letter and ask for a re -inspection for some
time during the first week in February.

Dear Ms. Sawyer:
I am writing in follow-up to my fourth inspection of Harrison's Roast Beef, which took place on Sunday.
We also conducted the food safety training class on that day. Everybody was in attendance, except one
person who experienced a death in the family and could not attend. We will conduct a one-on-one training
with that person during the next inspection, scheduled for this week.
The class went very well. There was a great deal of participation on the part of the staff. Many questions
were generated along with the opportunity to share information about current and future food handling
and sanitation practices.
I was able to follow-up the training with an inspection. This allowed people to ask further questions while
the information was fresh on their minds. As an outcome of that training, food handlers agreed not to
wear jewelry that was prohibited by code and to wear aprons over their street clothing. We also discussed
removing aprons before breaks of any kind, whether taken inside or outside the building.
All food handling deficiencies from past third party audits, as well as health inspections have been
corrected. I did not observe any health code violations during this most recent inspection.
They are also almost finished addressing the maintenance issues. The alto sham is scheduled to arrive on
December 21, 2009. We hope to have documentation regarding holding temperatures by the end of the
month.
They have also developed a cleaning schedule, which we are in the process of tweaking. However, I have
included the draft for your review and will send a final one by the time the contract is complete.
We will conduct another inspection this week and send you a summary of our findings. Until then, please
call me or Michael McMains, since he is the person in charge of the facility, if you have questions.
