Pr 2% milk is 44 deg F. Provide 41 or less. -All cold TCS foods shall be held at 41OF or below. Eggs that
have not been treated to destroy all viable Salmonellae shall be stored in refrigerated equipment that
maintains an ambient air temperature of 450F or less.

Today's inspection reveals Menu is very similar to Zime Cafe. No significant equipment or
facility changes were made in the transition from sushi to cafe.
