Ice cream area question from PIC-what is the appropriate
sneeze guard for self service hard ice cream? Currently
only have packaged novelties but will be expanding to soft
serve and hard pack ice cream. I will review this question
with Steve Casey in the Health Dept. -

Temperatures in RED identify items in the temperature danger zone. See the report notes for specific details.
Health Dept received a complaint of student becoming ill due to eating raw chicken. Reviewed
complaint with Bob Wilkey, Jari Pohjolainen and other staff. They had also received the complaint
and in response last week changed over to fully cooked chicken at the grill. Raw chicken is still
roasted at the oven.
Grill chicken process- Chicken is obtained from Sysco. Today all chicken in use was delivered this
morning. Chicken is cooked on the grill till marked by grill. Chicken is first grilled, then further
cooked in oven to 165°F, then held in a hot box over 135°F. Supervisors take routine chicken
temperatures at random to confirm to 165°F.
Roasted chicken- Roasted chicken is cooked fully in the oven, then temped and sliced to check for
doneness.
Sparky's is using a new temperature tracking system Called "I-Certainty". This system utilizes
system sensors on all coolers and has direct reading from thermometers to desktop spreadsheet.
System was begun in July. Log is reviewed daily by a manager

In Spring it will integrate with menu planning system. Review of the system showed that today's
temperature checks were completed. Den will be included after next week.
No violations related to cooking, holding or storing chicken was observed today in Sparky's.
All fruit on display today appeared fresh and wholesome. PIC not aware of fruit complaints.
No sushi prep currently -Kisho sushi not currently on site.
Concession stand outside using food truck and big John grill. Majors and Minors and the Mac
station are closed.
