Verified 04/25/23 OBSERVATION: Observed pizza slices sitting out at room temperature at time
of inspection. No written procedure or method being used for pizza held
under TPHC for slices. Provided PIC with written procedure template to
complete and keep on file in restaurant as well as send a copy to health
office for review. PIC to cease and desist TPHC until health office has
reviewed completed written procedure. PIC to use temperature control for
mantaining slices until procedure is reviewed by health office. Discussed
methods for recording time that is 4 hours past the point in time when
pizza is removed from temperature control .
**RE-INSPECTION** PIZZA SLICES BEING HELD UNDER REFRIGERATION AT TIME OF
RE-INSPECTION. OWNER STATES WRITTEN PROCEDURE WAS SUBMITTED TO HEALTH
OFFICE YESTERDAY.
3-501 .16 (A) (1) -P REGULATION: Item 21 Proper hot holding temperature -- Holding TCS Food, Hot
Verified 04/25/23 OBSERVATION: Observed sliced deli meats double-panned in top section of
in-line refrigerator upon arrival to inspection at 46°F. Employee placed
meats in single pan during time of inspection. Discussed cold holding
requirements with PIC.
**RE-INSPECTION** OBSERVED SLICED DELI MEATS IN TOP SECTION OF IN-LINE
REFRIGERATOR AT 41'F AT TIME OF RE-INSPECTION.

Verified 04/25/23 OBSERVATION: Observed sausages in the process of cooling in walk-in
refrigerator in a wrapped bag. Upon discussion of proper cooling methods,
PIC opened bag allowing for proper airflow.
**RE-INSPECTION** NO FOODS IN THE PROCESS OF COOLING AT TIME OF
RE-INSPECTION.

OBSERVATION: Observed hood vent filters with accumulation of grease. PIC
to ensure filters are cleaned at a frequency necessary in between
professional cleaning services to decrease grease and soil accumulations .
**RE-INSPECTION** OBSERVED HOOD VENT FILTERS WITH SLIGHT ACCUMULATION OF
GREASE. PIC STATES THEY ARE ACTIVELY WORKING ON ENSURING VENT FILTERS ARE
CLEAN.

In Compliance Observed CFPM and allergen certificate posted in public view.
Observed spaghetti in "Coca Cola" branded single-door refrigerator at
41°F. Observed diced tomatoes and raw chicken both in top section of
in-line refrigerator at 41°F and 39°F respectively. Observed pepperoni in
top section of pizza in-line refrigerator at 41°F. Observed tuna salad
and diced tomatoes both in walk-in refrigerator at 41°F. Observed
marinara sauce in thermal pot near grill at 145°F. Observed bleach
sanitizer and testing strips available. Observed food thermometer
available. Observed foods in freezer units to be frozen solid. Observed
clean dumpster and grease receptacles. Observed handwashinq sinks in
compliance. Observed dry storage in compliance. No pest activity
observed.
Discussion Observed hood sticker in compliance, next service due in
August 2023.
