OBSERVATION: No food thermometer available at time of inspection. PIC to
ensure a food thermometer is obtained and readily accessible at all times
to ensure proper maintenance of food temperatures.
**RE-INSPECTION** NO FOOD THERMOMETER AVAILABLE AT TIME OF RE-INSPECTION.
PIC STATES INTENTION TO OBTAIN. WILL VERIFY COMPLIANCE AT NEXT ROUTINE
INSPECTION.
4-302 .12 REGULATION: Item 36 Thermometer provided and accurate -- Food Temperature
Measuring Devices
Verified 04/25/23 OBSERVATION: Observed in-use utensils being stored in metal container of
water on grill at 97°F. Discussed with PIC that if utensils are going to
be stored in water in between uses, water must be maintained at a minimum
temperature of 135°F.
**RE-INSPECTION** OBSERVED IN-USE UTENSILS BEING STORED IN CONTAINER OF
WATER ON GRILL AT 960F UPON ARRIVAL TO INSPECTION. UPON REVIEW OF PROPER
IN BETWEEN USE UTENSIL STORAGE METHODS, PIC STORED UTENSILS IN A DRY
CONTAINER.

Verified 04/25/23 OBSERVATION: Observed croutons being stored in container originally
containing peeled garlic. PIC to ensure foods are only stored in approved
food pans and containers.

OBSERVATION: No covered receptacle available in employee unisex toilet
room for the proper disposal of sanitary napkins/products. PIC to provide
covered receptacle in toilet room.
**RE-INSPECTION** NO COVERED RECEPTACLE AVAILABLE IN TOILET ROOM AT TIME
OF RE-INSPECTION. PIC STATES INTENTION TO PROVIDE. WILL VERIFY COMPLIANCE
AT NEXT ROUTINE INSPECTION.
5-501 .17 REGULATION: Item 53 Toilet features; properly constructed, supplied,and
cleaned -- Toilet Room Receptacle, Wcmens, Covered
In Compliance Observed CFPM and allergen certificates posted in public
view. Observed ham and raw chicken both in two drawer refrigerator below
grill at 37°F. Observed chicken broth in top section of in-line
refrigerator at 37'F. Observed spaghetti in cabinet section of unit at
41°F. Observed eggplant, sausage, and pepperoni all in top section of
pizza in-line refrigerator at 41°F. Observed raw chicken and cooked
broccoli both in walk-in refrigerator at 38°F. Observed meatballs and
marinara sauce both in table-top steam table at 145°F and 150°F
respectively. Observed uncovered small container of alfredo sauce in the
process of cooling at 100°F that PIC states was cooked a half hour ago.
Observed bleach sanitizer and testing strips available. Observed
handwashing sink in compliance. Observed foods in freezer units to be
frozen solid. Observed clean knives on magnetic strip. Observed clean
dumpster and grease receptacle area. No pest activity observed.
Discussion Observed hood sticker in compliance, next service due in
September 2023.
