PIC states they hold a valid certificate. PIC to ensure certificate is posted in public view adjacent to food permit. **RE-INSPECTION** CFPM CERTIFICATE NOT REQUIRED AS OPEN-FOOD HANDLING HAS BEEN CEASED IN ESTABLISHMENT UNTIL FOOD PERMIT HAS BEEN UPGRADED BY HEALTH OFFICE. 2-102 .12 REGULATION: Item 02 Certified Food Protection Manager -- Certified Food Protection Manager Verified 07/07/23 OBSERVATION: Observed taquitos on left side of rolling warmer between 94-105 upon arrival to inspection. PIC voluntarily discarded taquitos during time of inspection. Discussed hot holding requirements with PIC. **RE-INSPECTION** NO FOODS BEING HOT HELD IN ESTABLISHMENT AT TIME OF RE-INSPECTION. 3-501 .16 (A) (1) -P REGULATION: Item 21 Proper hot holding temperature -- Holding TCS Food, Hot Verified 07/07/23 OBSERVATION: Observed commercially pre-packaged chicken sandwiches and hard-boiled eggs both in open-face refrigerator across from entrance to store at 42°F and 49'F. PIC voluntarily removed all TCS foods from unit during time of inspection. PIC adjusted thermostat on unit during time of inspection. Discussed cold holding requirements with PIC. **RE-INSPECTION** OBSERVED COMMERCIALLY PRE-PACKAGED CHICKEN SANDWICHES IN OPEN-FACE REFRIGERATOR MENTIONED ABOVE AT 41OF AT TIME OF RE-INSPECTION. 3-501 .16 (A) (2) (B) -P REGULATION: Item 22 Proper cold holding temperature -- Holding TCS Food, Cold OBSERVATION: No food thermometer available at time of inspection. PIC to ensure a food thermometer that is capable of taking hot and cold temperatures of foods is readily available. **RE-INSPECTION** PIC STATES A FOOD THERMOMETER HAS BEEN ORDERED BUT UNABLE TO VERIFY. NO OPEN-FOOD HANDLING AT TIME OF RE-INSPECTION. 4-302 .12 REGULATION: Item 36 Thermometer provided and accurate -- Food Temperature Measuring Devices Verified 07/07/23 OBSERVATION: Observed two sleeves of sandwich cookies and packages of frozen waffles not labeled for retail sale. Discussed with PIC to discontinue selling foods not labeled to be sold individually. **RE-INSPECTION** OBSERVED PACKAGES OF FROZEN WAFFLES NOT LABELED FOR RETAIL SALE AT TIME OF RE-INSPECTION. PIC REMOVED WAFFLES FROM FREEZER DURING TIME OF RE-INSPECTION. PIC TO ENSURE FOODS ARE PROPERLY LABELED FOR RETAIL SALE. 3-602 .11 REGULATION: Item 37 Food properly labeled : original container -- Food Labels Verified 07/07/23 OBSERVATION: Observed table-top rolling warmer unit on back counter in store that does not have a barrier/food guard in place to protect un-packaged hotdogs and taquitos that are intended for customer self-service. PIC to ensure un-packaged foods intended for customer self-service are protected from potential contamination and tampering. **RE-INSPECTION** WARMER UNIT NOT IN USE AT TIME OF RE-INSPECTION. "RE-INSPECTION" ALLERGEN CERTIFICATE NOT REQUIRED AS NO OPEN-FOOD HANDLING BEING CONDUCTED. 590.011.3 REGULATION: Item 58 Allergen Awareness (509.011) -- Training Discussion Establishment has expanded its food offerings to include hotdogs and taquitos available for customer self-service. PIC states serving tongs are washed, rinsed, and sanitized in three bay sink at Aroma Joes, located inside of store. Establishment currently holds a retail permit which permits the sale of commercially pre-packaged foods and beverages only. PIC to contact health office to discuss compliance regarding permit. In Compliance Observed commercially pre-packaged salame and cheese in additional open-face refrigerator at 41'F. Observed multi-glass door refrigerator containing gallons of milk operating at 41'F. Observed foods in freezer units to be frozen solid. Observed hotdogs on right side of rolling warmer at 137°F. Closing Violations marked "Verified" have been corrected. Violations not marked "Verified" remain uncorrected. Uncorrected violations are to be corrected immediately. Uncorrected violations may result in additional Re-inspections and fees, fines and or administrative action including possible suspension of permit.
