PIC to ensure handwashing sinks are used for handwashing only and remain empty and accessible for use at all times . 5-205 . 11-Pf REGULATION: Item 10 Adequate handwashing sinks properly supplied and accessible -- Handwashing Sink-Operation and Maintenance OBSERVATION : Observed multiple shellstock tags kept in container with no date written on them of when last shell from container was sold. Discussed shellstock identification requirements with PIC . 3-203 . 12-Pf REGULATION: Item 14 Required records available, shellstock tags, parasite destruction -- Shellstock, Maintaining Identification OBSERVATION : Observed ice machine with slight accumulation of what appears to be mold around chute area . PIC to ensure machine is emptied, cleaned, and sanitized. 4-602 . 11 REGULATION: Item 16 Food contact surface; cleaned and sanitized -- Equipment Cleaning FCS Frequency OBSERVATION : Observed crab stuffed mushrooms, salmon cakes, crab cakes, and stuffed clams all in glass display refrigerator adjacent to lobster tank at 45°F, 47°F, 43°F, and 48°F respectively. PIC states doors to unit were left open when unit was being cleaned out at approximately 8 : 30am this morning which may be attributing to elevated temperatures . Discussed with PIC to relocate food items to another refrigerator when unit is cleaned to avoid temperature abuse . 3-501 . 16 (A) (2) (B) -P REGULATION: Item 22 Proper cold holding temperature -- Holding TCS Food, Cold Correct On Site OBSERVATION : Observed container of rice pilaf in walk-in refrigerator that PIC states was cooked approximately 2-3 days ago at 44°F. PIC voluntarily discarded rice pilaf during time of inspection . Discussed cold holding requirements with PIC . 3-501 . 16 (A) (2) (B) -P REGULATION: Item 22 Proper cold holding temperature -- Holding TCS Food, Cold OBSERVATION : No quaternary sanitizer testing strips available at time of inspection . PIC to obtain testing strips to accurately test concentration of sanitizer . 4-302 . 14-Pf REGULATION: Item 48 Warewashing facilities : installed, maintained, and used; test strips -- Sanitizing Solutions, Testing Devices Discussion Observed fisheries permit posted in public view with an expiration date of 12/31/2022 . PIC to ensure fisheries permit is renewed. In Compliance Observed CFPM and allergen certificates posted in public view . Observed raw halibut, raw salmon, and raw scallops in additional glass display refrigerator between 40-41°F . Observed cups of coleslaw in top section of in-line refrigerator at 40°F . Observed cups of tartar sauce in cabinet section of unit at 37 °F . Observed raw clam strips and raw haddock both in "True" branded single-door refrigerator at 41°F . Observed previously frozen lobster tails in walk-in refrigerator at 41°F . Observed quaternary sanitizer available . Observed foods in walk-in freezer to be frozen solid.
