Verified 07/14/23 OBSERVATION: No irreversible registering temperature indicator available
to test high-temperature warewashing machine at time of inspection.
Discussed options of temperatures indicators with PIC such as 160°F
temperature strips/stickers, dish plate thermometer, etc.
**RE-INSPECTION** OBSERVED TEMPERATURE TESTING STRIPS AVAILABLE TO TEST
HIGH-TEMPERATURE WAREWASHING MACHINE AT TIME OF RE-INSPECTION.
4-703.11-P REGULATION: Item 16 Food contact surface; cleaned and sanitized --
Sanitizing Hot Water and Chemical-Methods
Verified 07/14/23 OBSERVATION: Observed two containers of pasta in cabinet section of
in-line refrigerator that PIC states was cooked yesterday at 44°F and
46°F respectively. PIC voluntarily discarded both containers of pasta
during time of inspection. Discussed cooling requirements with PIC.
**RE-INSPECTION** OBSERVED TWO CONTAINERS OF PASTA IN WALK-IN
REFRIGERATOR THAT PIC STATES WERE BOTH COOKED YESTERAY AT 41OF AT TIME OF
RE-INSPECTION.
3-501 .14-P REGULATION: Item 20 Proper cooling time and temperature -- Cooling
Verified 07/14/23 OBSERVATION: Observed deli slicer with slight accumulation of food
particles on back of blade. PIC states slicer was last used yesterday.
PIC to ensure deli slicer is thoroughly cleaned and sanitized after each
use.
**RE-INSPECTION** OBSERVED DELI SLICER TO BE CLEAN AT TIME OF
RE-INSPECTION.
4-601 .11 (A)-Pf REGULATION: Item 16 Food contact surface; cleaned and sanitized --

OBSERVATION: Observed breakfast menu missing asterisks next to items
applicable to consumer advisory such as eggs benedict and "eggs any
style. " Footnote also missing on menu. PIC to ensure footnote stating
"these items are served raw or undercooked, or contain (or may contain)
raw or undercooked ingredients" is added to menu.
**RE-INSPECTION** PIC IS CURRENTLY PRINTING NEW MENUS WITH CONSUMER
ADVISORY EDITS. WILL VERIFY COMPLIANCE AT NEXT ROUTINE INSPECTION.

Verified 07/14/23 OBSERVATION: Observed spray bottle containing chemical that PIC identified
as "orange force" not labeled with common name of chemical on it. PIC
labeled spray bottle during time of inspection. PIC to ensure all working
containers and spray bottles containing chemicals are labeled with their
common name.

view. Observed cooked ground beef and potato salad both in walk-in
refrigerator at 41°F. Observed sliced cherry tomatoes and cooked broccoli
both in top section of in-line refrigerator at 41°F. Observed sun-dried
tomatoes in cabinet section of unit at 41°F. Observed flan in "Coca Cola"
branded single-door refrigerator at 41°F. Observed high-temperature
warewashing machine operating at 168°F via inspector's dish plate
thermometer. Observed quaternary sanitizer and testing strips available.
