OBSERVATION: Observed grilled chicken, sausage patties, and lox all in
cold holding table closest to baked goods display at 47°F, 52°F, and 56°F
respectively. Foods observed in plastic bags inside of containers which
may be attributing to elevated temperatures. PIC to remove foods from
plastic bags and monitor temperatures in unit.
**RE-INSPECTION** OBSERVED SLICED DELI TURKEY, SAUSAGE PATTIES,
MOZZARELLA CHEESE, AND BACON ALL IN COLD HOLDING TABLE MENTIONED ABOVE AT
45°F, 44°F, 55°F, AND 51°F RESPECTIVELY AT TIME OF RE-INSPECTION.
REVIEWED COLD HOLDING REQUIREMENTS WITH PIC. PIC TO CORRECT IMMEDIATELY
AND DISCARD ANY TCS FOODS THAT HAVE REMAINED IN UNIT FOR MORE THAN 4
HOURS. WILL VERIFY COMPLIANCE AT 2ND RE-INSPECTION.

Verified 07/18/23 OBSERVATION: Observed ice machine with slight accumulation of what appears
to be mold around chute area. PIC to ensure machine is emptied, cleaned,
and sanitized.
**RE-INSPECTION** OBSERVED ICE MACHINE TO BE CLEAN AT TIME OF
RE-INSPECTION.

OBSERVATION: No food thermometer available at time of inspection. PIC to
ensure a food thermometer that is capable of taking temperatures of hot
and cold foods is readily accessible for use at all times.
**RE-INSPECTION** NO FOOD THERMOMETER AVAILABLE AT TIME OF RE-INSPECTION.
PIC STATES OWNER HAS ORDERED FOOD THERMOMETERS BUT UNABLE TO VERIFY. WILL
VERIFY COMPLIANCE AT 2ND RE-INSPECTION.

Verified 07/18/23 OBSERVATION: Observed water dripping on packaged foods and pitchers of
beverages in walk-in refrigerator. It appears water is coming from
refrigerator' s A/C unit. PIC to move foods to a location where they are
protected from dripping water. PIC to have A/C unit inside of
refrigerator repaired by licensed repair personnel. PIC to send status
update or repair slip to health office within 24 hours.
**RE-INSPECTION** NO WATER OBSERVED DRIPPING ON FOODS OR PITCHERS OF
BEVERAGES AT TIME OF RE-INSPECTION.

water at time of inspection. Discussed with PIC that if utensils are
going to be stored in water, water must be maintained at 135°F.

with accumulation of dust. PIC to ensure fan and surrounding area is

TIME OF RE-INSPECTION.
In Compliance Observed gallon of milk in low-boy refrigerator below
espresso machine at 40°F. Observed chicken salad, tuna salad, and sausage
patties all in cold holding table to right of microwaves at 40°F.
Observed lox and sliced ham both in cabinet section of unit at 41°F.
Observed sliced tomatoes and butter both in walk-in refrigerator at 41°F.
Observed bleach sanitizer and testing strips available.
