OBSERVATION: PIC unable to locate bodily fluid clean-up kit at time of
inspection. PIC to ensure kit or written procedure for how to respond to
bodily spills is kept readily available for reference.

Correct On Site OBSERVATION: No handwashing soap available at handwashing sink in kitchen
area upon arrival to inspection. PIC supplied soap at handwashing sink
during time of inspection. PIC to ensure handwashing soap is supplied at
handwashing sink at all times.

OBSERVATION: No handwashing signage available at handwashing sink in
kitchen at time of inspection. PIC to provide signage at handwashing

kitchen area upon arrival to inspection. PIC supplied paper towels at
sink during time of inspection. PIC to ensure handwashing sink is
supplied with paper towels at all times .

Correct On Site OBSERVATION: Observed sponges being stored directly inside of handwashing
sink in kitchen area upon arrival to inspection. PIC removed sponges from
sink during time of inspection. PIC to ensure handwashing sink is used
solely for handwashing and remains empty and accessible for use at all
times.

OBSERVATION: Observed ice machine with slight accumulation of what appears
to be mold around chute. PIC to ensure machine is emptied, cleaned, and
sanitized.

OBSERVATION: Observed container of chicken salad in walk-in refrigerator
that PIC states was prepared on 7/23 missing date marking. Discussed date
marking requirements with PIC.

prepared and held in a FOOD ESTABLISHMENT for more than 24 hours shall be
clearly marked to indicate the date or day by which the FOOD shall be
consumed on the PREMISES, sold, or discarded when held at a temperature
of 5°C (41°F) or less for a maximum of 7 days. The day of preparation
shall be counted as Day 1.

OBSERVATION: Observed one unlabeled spray bottle containing chemical that
PIC identified as disinfectant. PIC to ensure working containers and
spray bottles containing chemicals are labeled with their common name.

OBSERVATION: No quaternary sanitizer testing strips available at time of
inspection. PIC to obtain testing strips to accurately test concentration
of sanitizer.
4-302 .14-Pf REGULATION: Item 48 Warewashing facilities : installed, maintained, and
used; test strips -- Sanitizing Solutions, Testing Devices
OBSERVATION: Observed area under mini flat-top grill, exterior of
microwave, and wall to left of mini fryers with accumulation of grease,
food, and soil residues. PIC to ensure surfaces mentioned above are
cleaned at a frequency necessary to decrease such accumulations.
4-602 .13 REGULATION: Item 49 Non - food contact surfaces clean -- Nonfood Contact
Surfaces
Discussion No copy of food permit available on site at time of
inspection. PIC to contact health office to obtain copy of permit. PIC to
post in public view with CFPM and allergen certificates once obtained.
Discussion PIC states Boston BBQ food trailer uses kitchen space inside
of establishment to season meats before they are placed in smoker. PIC
states foods used on trailer are occasionally stored in establishment's
walk-in refrigerator and dishes used on trailer are washed, rinsed, and
sanitized in establishment's three bay sink in kitchen area.
In Compliance Observed valid copies of both CFPM and allergen certificates.
Observed chicken salad in walk-in refrigerator at 37°F. Observed foods in
freezer units to be frozen solid. Observed quaternary sanitizer tablets
on site.
Discussion Observed hood sticker in compliance, next service due in
August 2023.
Closing Correct Priority Item and Priority Foundation Item violations immediately;
Core Item violations within 10 days. Correct all violations in entirety
and maintain. Train and supervise staff. Failure to correct all
violations and maintain corrections may result in administrative action
