OBSERVATION: Observed multiple packaged food items including but not
limited to fried chicken, fruit salad, guacamole, and queso dips not
packaged in a way that protects foods from potential contamination and
tampering. PIC to ensure packaged food items are packaged in a way that
protect food's integrity from potential contamination and tampering.
**RE-INSPECTION** OBSERVED PACKAGED PRODUCTS LISTED ABOVE IN SAME
CONDITION. REVIEWED PACKAGING INTEGRITY WITH PIC. WILL VERIFY COMPLIANCE
AT 2ND RE-INSPECTION.

Verified 08/11/23 OBSERVATION: Observed packaged fried chicken on hot holding table near
deli counter at 115°F. Discussed hot holding requirements with PIC and
employees . Employee pulled items from table to reheat during time of
inspection.
**RE-INSPECTION** OBSERVED FRIED CHICKEN ON HOT HOLDING TABLE AT 150°F AT
TIME OF RE-INSPECTION.
3-501 .16 (A) (1) -P REGULATION: Item 21 Proper hot holding temperature -- Holding TCS Food, Hot
Verified 08/24/23 OBSERVATION: Observed halved watermelons in open-face refrigerator in
produce department at 51°F. Label states watermelons were packaged at
9:00am this morning. PIC instructed employees to pull sliced watermelons
from display during time of inspection. Discussed cold holding
requirements with PIC.
**RE-INSPECTION** OBSERVED HALVED WATERMELONS IN OPEN-FACE REFRIGERATOR
BETWEEN 50-51OF AT TIME OF RE-INSPECTION. EMPLOYEE REMOVED PACKAGED
SLICED MELONS FROM UNIT DURING TIME OF RE-INSPECTION. PIC STATES
INTENTION TO CEASE HOLDING SLICED MELONS IN UNIT. WILL VERIFY COMPLIANCE
AT 2ND RE-INSPECTION.

Verified 08/11/23 OBSERVATION: Observed packaged watermelon chunks in additional open-face
refrigerator in produce department at 46°F. Affected products were
removed from display during time of inspection. Discussed cold holding
requirements with PIC.

Verified 08/11/23 OBSERVATION: Observed commercially pre-packaged sausages and bacon both in
open-face refrigerator near deli counter at 44°F and 46°F respectively.
PIC states intention to place a work order for unit. PIC to send status
update or repair slip to health office within 24 hours. Discussed with
PIC to hold for vendor credit or discard any TCS foods in refrigerator
that have remained for more than 4 hours.
**RE-INSPECTION** OBSERVED COMMERICIALLY PRE-PACKAGED BACON IN OPEN-FACE
REFRIGERATOR NEAR DELI COUNTER AT 41°F.

**RE-INSPECTION** PIC POSTED CFPM AND ALLERGEN CERTIFICATES IN PUBLIC
VIEW DURING TIME OF RE-INSPECTION.
Discussion Observed expired hood stickers, PIC states professional hood
cleaning company is scheduled to service hoods tomorrow night (8/1) .
**RE-INSPECTION** OBSERVED NEW HOOD STICKERS AT TIME OF RE-INSPECTION,
HOODS DUE FOR CLEANING FEBRUARY 2024.
In Compliance Observed valid copies of both CFPM and allergen certificates.
Observed pasta salad and cooked rotisserie chicken both in deli walk-in
refrigerator at 39°F and 40°F respectively. Observed sliced mortadella
and buffalo chicken both in glass display deli case at deli counter at
41°F. Observed packaged watermelon and cantaloupe both in open-face
refrigerator near entrance to produce department at 41'F. Observed deli
salads in open-face refrigerator at deli counter at 41'F. Observed
stuffed clams and raw tuna both in glass display case at seafood counter
at 41°F. Observed raw tuna steak in seafood walk-in refrigerator at 40°F.
Observed raw steak and raw ground beef all in meat glass display
refrigerator at meat counter at 40°F. Observed gallons of milk in dairy
walk-in refrigerator at 41°F. Observed commercially pre-packaged frozen
foods delivered to store frozen solid. Observed potato wedges and chicken
wings both in hot holding table near deli department at 135°F. Observed
quaternary sanitizer in three bay sinks in all departments at 200ppm.
Testing strips available. Observed high-temperature warewashing machine
operating at 180°F via temperature testing strips in bakery department.
Closing Violations marked "Verified" have been corrected. Violations not marked
"Verified" remain uncorrected. Uncorrected violations are to be corrected
immediately. Uncorrected violations may result in additional
