DESCRIPTION OF VIOLATION

Correct On Site OBSERVATION: No handwashing soap available at handwashing sink adjacent to
front counter or at handwashing sink in back room upon arrival to
inspection. PIC supplied handwashing soap at both sinks during time of
inspection. PIC to ensure handwashing soap is supplied at all handwashing
sinks at all times.

Repeat OBSERVATION: Observed bacon strips, sausage patties, and cream cheese cup
all in left top section of in-line refrigerator at 50°F. Observed egg
bites in four drawer refrigerator below unit at 50°F. PIC called for
service during time of inspection. Service for unit is scheduled to take
place either later today or tomorrow. Unit was voluntarily emptied and
foods were discarded during time of inspection. PIC to send status update
or repair slip to health office within 24 hours.

Repeat OBSERVATION: Observed fan in walk-in refrigerator with slight accumulation
of dust. PIC to ensure fan is cleaned at a frequency necessary to
decrease such accumulation.

Repeat OBSERVATION: Observed accumulation of soil residues inside low-boy
refrigerator below espresso machine at time of inspection. PIC to ensure
interior of unit is cleaned to sight and touch.

Repeat OBSERVATION: Observed interior of top section of in-line refrigerator with
accumulation of food particles. PIC to ensure interior of unit is cleaned
at a frequency necessary to decrease accumulation.

OBSERVATION: Observed slight presence of flies specifically in area near
warming oven and in seating area. Observed latest pest control report
from Pest-End dated 9/20/2023 stating food build-up observed in hard to
reach places with the recommendation to pull appliances forward to
achieve a better clean. PIC to follow pest control operator's
recommendations to decrease presence of pests in establishment.

In Compliance Observed cup of strawberry cream cheese in walk-in
refrigerator at 40°F. Observed bacon strips and sliced cheese both in
"Delfield" branded single-door refrigerator at 41°F. Observed coconut
milk in low-boy refrigerator adjacent to warming oven at 41°F. Observed
egg patties and sausage patties both in sliding drawer warmer at 153°F
and 146°F respectively. Observed bags of hash browns in hot holding unit
at 142°F. Observed quaternary sanitizer in three bay sink and in labeled
bucket between 200-300ppm via readily available testing strips. Observed
foods in freezer units to be frozen solid.
