Verified 09/29/23 OBSERVATION: No irreversible registering temperature indicator available
to test high-temperature warewashing machine at time of inspection.
Discussed options of temperatures indicators with PIC such as 160°F
temperature strips/stickers, dish plate thermometer, etc.
**RE-INSPECTION** OBSERVED ONLINE CONFIRMATION THAT TEMPERTURE INDICATOR
FOR DISH MACHINE HAS BEEN ORDERED AT TIME OF RE-INSPECTION.
4-703.11-P REGULATION: Item 16 Food contact surface; cleaned and sanitized --
Sanitizing Hot Water and Chemical-Methods
Verified 09/29/23 OBSERVATION: Observed container of potatoes in standing warmer at 105°F.
Upon discussion of hot holding requirements and reheating, PIC instructed
employees to reheat potatoes to 165°F prior to placing back in warmer.
**RE-INSPECTION** NO FOODS BEING HOT HELD IN STANDING WARMER MENTIONED
ABOVE AT TIME OF RE-INSPECTION.
3-501 .16 (A) (1) -P REGULATION: Item 21 Proper hot holding temperature -- Holding TCS Food, Hot
Verified 09/29/23 OBSERVATION: Observed covered container of pasta in the process of
cooling. Upon discussion of proper cooling methods, PIC uncovered
container of pasta to allow for adequate airflow.
**RE-INSPECTION** NO FOODS IN THE PROCESS OF COOLING AT TIME OF
RE-INSPECTION.

Verified 09/29/23 OBSERVATION: Observed several employees conducting open-food handling
while wearing watches and bracelets. PIC to ensure that with the
exception of a plain ring such as a wedding band, jewelry on the hands
and arms is not permitted while open-food handling is conducted.
**RE-INSPECTION** NO EMPLOYEES OBSERVED OPEN-FOOD HANDLING WEARING
UNAPPROVED JEWELRY ON HANDS OR WRISTS AT TIME OF RE-INSPECTION.
2-303.11 REGULATION: Item 40 Personal cleanliness -- Jewelry
In Compliance Observed cut watermelon in cold holding table at 41°F.
Observed hard-boiled eggs in "True" branded single-door refrigerator at
41°F. Observed cooked shredded pork in "gluten-free" refrigerator at
40°F. Observed deli meats in walk-in refrigerator at 41°F. Observed
grilled chicken in table-top hot holding unit at 161°F. Observed
high-temperature warewashing machine operating at 170°F via inspector's
dish plate thermometer. Observed quaternary sanitizer in three bay sink
at 400ppm. Testing strips available. Observed foods in freezer units to
be frozen solid.
Discussion PIC states professional hood cleaning company is returning to
school to clean hood later this month and new sticker will be applied to
hood following service.
Closing Violations marked "Verified" have been corrected. Violations not marked
"Verified" remain uncorrected. Uncorrected violations are to be corrected
immediately. Uncorrected violations may result in additional
Re-inspections and fees, fines and or administrative action including
