Written procedure available on site. PIC states slices were removed from temperature control an hour ago and set timer accordingly during time of inspection. 3-501 .19-Pf REGULATION: Item 24 Time as a Public Health Control -- Time as a Public Health Control OBSERVATION: Observed one wet rag sitting on counter near grill upon arrival to inspection. PIC to ensure cleaning cloths are held in sanitizer solution in between uses. 3-304 .14 REGULATION: Item 41 Wiping cloths : properly used and stored -- Wiping Cloths, Use Limitation OBSERVATION: Observed door frames on both cabinet sections of in-line refrigerators and on bottom shelf of prep table adjacent to three bay sink with accumulation of soil residues . PIC to ensure surfaces mentioned above are cleaned at a frequency necessary to decrease such accumulations. 4-602 .13 REGULATION: Item 49 Non - food contact surfaces clean -- Nonfood Contact Surfaces In Compliance Observed pasta and diced tomatoes both in top section of in-line refrigerator behind front counter at 41°F. Observed mac and cheese in cabinet section of unit at 41°F. Observed cooked chicken wings and raw chicken both in two drawer refrigerator to right of fryers at 41°F and 38°F respectively. Observed sliced ham, sliced tomatoes, and mozzarella cheese all in top section of pizza in-line refrigerator at 41°F. Observed grilled chicken and fire-roasted tomatoes in walk-in refrigerator at 41°F. Observed quaternary sanitizer in three bay sink at 200ppm. Testing strips available. Observed foods in freezer unit to be frozen solid. Discussion Observed hood sticker in compliance, next service due later this month. Closing Correct Priority Item and Priority Foundation Item violations immediately; Core Item violations within 10 days. Correct all violations in entirety and maintain. Train and supervise staff.
