Discussed food storage hierarchy with PIC. **RE-INSPECTION** OBSERVED FOODS STORED PROPERLY INSIDE OF WALK-IN REFRIGERATOR AT TIME OF RE-INSPECTION. 3-302 .11-P REGULATION: Item 15 Food separated and protected -- Packaged and Unpackaged Food-Separation, Packaging, and Segregation Verified 10/12/23 OBSERVATION: Observed roast beef sitting out of temperature control at 85°F that PIC states has been sitting out for approximately 2 hours. Employees sliced roast beef during time of inspection. Discussed hot holding requirements with PIC. **RE-INSPECTION** OBSERVED ROAST BEEF SITTING OUT OF TEMPERATURE CONTROL AT 890F UPON ARRIVAL TO RE-INSPECTION. PIC STATES ROAST BEEF HAS BEEN SITTING OUT OF TEMPERATURE CONTROL FOR AN HOUR. EMPLOYEE STARTED REHEATING ROAST BEEF DURING TIME OF RE-INSPECTION. UPON DISCUSSION WITH PIC, TPHC MAY BE OF INTEREST TO USE FOR ROAST BEEF. PROVIDED PIC WITH TPHC WRITTEN PROCEDURE TEMPLATE TO COMPLETE AND SEND TO HEALTH OFFICE FOR REVIEW. DISCUSSED WITH PIC TO KEEP ROAST BEEF UNDER TEMPERATURE CONTROL UNTIL TPHC PROCEDURE HAS BEEN REVIEWED. Plastic wrapped deli meats stored on top of wax paper and cardboard observed under wax paper in metal container. PIC removed wax paper and cardboard during time of inspection. Discussed cold holding requirements with PIC. **RE-INSPECTION** OBSERVED METAL CONTAINER OF SLICED HAM, SALAMI, AND TURKEY ALL IN TOP SECTION OF IN-LINE REFRIGERATOR CLOSEST TO PIZZA OVEN BETWEEN 44-45°F. EMPLOYEES PLACED CONTAINER OF ICE UNDER CONTAINER OF DELI MEATS AS AN ADDITIONAL COOLANT. WILL VERIFY COMPLIANCE AT TIME OF 2ND RE-INSPECTION. ***2ND RE-INSPECTION*** OBSERVED CONTAINER OF SLICED DELI TURKEY AND DELI HAM BOTH IN TOP SECTION OF IN-LINE REFRIGERATOR CLOSEST TO PIZZA OVEN AT 40OF AT TIME OF 2ND RE-INSPECTION. 3-501 .16 (A) (2) (B) -P REGULATION: Item 22 Proper cold holding temperature -- Holding TCS Food, Cold Verified 09/29/23 OBSERVATION: Observed bag of alfredo sauce in the process of thawing sitting out on prep table near three bay sink. Discussed proper thawing methods with PIC. 3-501 .13 REGULATION: Item 35 Approved thawing methods used -- Frozen, Thawing Verified 09/29/23 OBSERVATION: Observed presence of flies specifically around warewashing area. Observed latest pest control report from Pest-End dated 7/27 . PIC states they have contacted company for additional service regarding fly activity but have not been able to schedule a service as of yet. **RE-INSPECTION** NO PRESENCE OF FLIES OR OTHER PESTS IN ESTABLISHMENT OBSERVED AT TIME OF RE-INSPECTION. 6-501 .111 REGULATION: Item 38 Insects, rodents, and animals not present -- Pests Free of In Compliance Observed tuna salad and pickles both in top section of in-line refrigerator at 41°F. Observed pizza sauce, sliced tomatoes, and pepperoni all in top section of additional in-line refrigerator at 40°F. Observed tzatziki sauce in cabinet section of unit at 41°F. Observed shredded raw steak and raw chicken both in two drawer refrigerator below grill at 41°F. Observed pasta and pizza rolls both in "Pepsi" branded single-door refrigerator at 41°F. Observed deli turkey and raw beef both in walk-in refrigerator at 41°F. Observed marinara sauce and meatballs both in table-top hot holding unit at 135'F and 153oF respectively. Observed bleach sanitizer and testing strips available. Observed foods in freezer units to be frozen solid. Discussion Observed hood sticker in compliance, next service due in October 2023. Closing Violations marked "Verified" have been corrected. Violations not marked "Verified" remain uncorrected. Uncorrected violations are to be corrected immediately. Uncorrected violations may result in additional Re-inspections and fees, fines and or administrative action including possible suspension of permit.
