The HACCP Plan for Raw Meat and Poultry, dated AUgUSt 16, 2023 has been reviewed. 'Fhe plan,
as written, does riot comply with the 2013 Food Code Requirements, Therefore expanding the
HACCP Plan to include deli meats, cured foods, seafood Barad cheese is not approved, Please
review the information below and submit a revised HACCP Plan.
It is unclear if the submitted plan is intended for FC 3-502.11 Reduced Oxygen Packaging with a
Variance or FC 3-502,12 Reduced Oxygen Packaging without a variance. Please review the
respective erode references, determine the list of foods intended to reduce oxygen package an(]
revise the HACCP Plan accordingly.
1. FC 3-502..12 Food List Identiified, inforrriation provided on the cover acid page 3 indicate
they plan is limited to raw meats and poultry, However, page 8 lists additional foods,
processed cured meats, including "deli meats", cheese and seafcaod.
Provide a plan with a consistent list of foods seeking permission to ROP.

process information for ROP of seafood. Review the information contained in FC 3-
502,12 (C) and submit Kra revised HACCP Plan or ren-iovea seafood frond the: food list.

5. FC 8-103.12 The HACCP Plan identifies Reduced Oxygen Packaging processes dedicated
area is the refrigerated meat walk-in. However, during inspections these processes are
being clone outside the meat walk-in. The Either revise the plan or'submit
docur'nentation employees have been trained accordingly.
6. FC 8-201.14 Sample logs are not included in the HACCP Plan, Include the following logs
in the revised HACCP Plan:
• Temperature Log
• Vacuum packaging log
