Observed wontons in cabinet section of unit between 45-46°F. PIC to monitor temperatures in unit and ensure food temperatures are maintained at 41°F or below. If thermostat on unit is adjusted and temperatures do not return to 41OF within an hour, PIC to call for service and send status update or repair slip to health office within 24 hours. 3-501 .16 (A) (2) (B) -P REGULATION: Item 22 Proper cold holding temperature -- Holding TCS Food, Cold OBSERVATION: Observed utensils being stored in water near rice pots at 73°F. Discussed with PIC that utensils are going to be stored in water, water must be maintained at 135°F or above, or otherwise in a dry, clean container. 3-304 .12 REGULATION: Item 43 In - use utensils properly stored -- In-Use Utensils, Between-Use Storage OBSERVATION: Observed cardboard box on elevated shelf on wire rack holding containers of duck sauce with what appear to be droppings consistent with mice. Observed latest pest control report dated 5/4/2023 stating no observed activity at time of service but old droppings consistent with mice were observed. PIC to discard box. 6-501 .111 REGULATION: Item 38 Insects, rodents, and animals not present -- Pests Free of In Compliance Observed CFPM and allergen certificates posted in public view. Observed spring rolls in "Traulsen" branded single-door refrigerator at 41°F. Observed noodles and cooked chicken wings both in walk-in refrigerator at 41°F. Observed fried rice in thermal rice pot at 140°F. Observed chicken wings in fryer basket at 150°F. Observed fried shrimp in the process of cooling in refrigerator between 66-67°F that PIC states was cooked approximately a half hour ago. Observed bleach sanitizer in three bay sink in compliance. Observed food thermometer readily available. Observed foods in freezer units to be frozen solid. Observed handwashing sinks in compliance. Discussion Observed hood sticker in compliance, next service due in June 2023. Closing Correct Priority Item and Priority Foundation Item violations immediately; Core Item violations within 10 days. Correct all violations in entirety and maintain. Train and supervise staff. Failure to correct all violations and maintain corrections may result in administrative action and or fines.
