OBSERVATION: Unable to verify if at least one employee holds a valid CFPM
(certified food protection manager) certificate. PIC to ensure valid
certificate is posted in public view.

OBSERVATION: Observed non-operating handwashing sink on truck. PIC to
ensure handwashing sink is accessible at all times for use by employees.

Correct On Site OBSERVATION: Observed shelled pasteurized eggs sitting out of temperature
control in holding well on truck upon arrival to inspection. PIC states
eggs have been sitting out of temperature control for approximately 20
minutes. Upon discussion of cold holding requirements, PIC filled well
with ice and placed container of eggs on ice.

OBSERVATION: No food thermometer available on truck at time of inspection.
PIC to ensure a food thermometer is readily available to take accurate
temperatures of hot and cold foods at all times.

Measuring Devices
OBSERVATION: No hot or cold water available at either handwashing sink or
three bay sink on truck at time of inspection. PIC states handwashing
sinks in toilet rooms located in building adjacent to truck are used.
Large container of water is kept on truck for sanitizer solution.
Discussed with PIC that cold and hot water of at least 100°F is to be
made available on truck for proper handwashing and sanitizing procedures .
PIC to send status update regarding availability of water on truck to
health office within 24 hours.

OBSERVATION: Unable to verify an allergen awareness training certificate
at time of inspection. PIC to ensure certificate is posted in public
view. Provided contact information of approved allergen certificate

Discussion No food permit available on truck at time of inspection. PIC
to contact health office to obtain copy of food permit. Permit shall be
posted in public view adjacent to CFPM and allergen certificates.
In Compliance Observed cooked chicken and shredded cheese both in two door
refrigerator on truck at 41°F. Observed sausage patties in metal pan on
flat-top grill at 140°F. Observed concentration of cleaner/sanitizer in
labeled bucket in compliance via readily available testing strips.
Observed foods in freezer unit to be frozen solid.
