Discussed date marking requirements with PIC. refrigerated, READY-TO-EAT, TIME/TEMPERATURE CONTROL FOR SAFETY FOOD prepared and held in a FOOD ESTABLISHMENT for more than 24 hours shall be clearly marked to indicate the date or day by which the FOOD shall be consumed on the PREMISES, sold, or discarded when held at a temperature of 5°C (41°F) or less for a maximum of 7 days. PIC to ensure employees conducting open-food handling wear an approved hair restraint such as a hat or hair net. **RE-INSPECTION** OBSERVED EMPLOYEES CONDUCTING OPEN-FOOD HANDLING WEARING HATS AT TIME OF RE-INSPECTION. 2-402 .11 REGULATION: Item 40 Personal cleanliness -- Hair Restraints Verified 11/27/23 OBSERVATION: Observed exterior of pizza oven hood system and light covers specifically near pizza ovens with accumulation of dust. PIC to ensure surfaces are cleaned at a frequency necessary to decrease accumulation. **RE-INSPECTION** OBSERVED EXTERIOR OF PIZZA OVEN HOOD SYSTEM AND LIGHT COVERS NEAR PIZZA OVENS TO BE CLEAN AT TIME OF RE-INSPECTION. 4-602 .13 REGULATION: Item 49 Non - food contact surfaces clean -- Nonfood Contact Surfaces In Compliance Observed pasta, rice pilaf, and sliced tomatoes all in "True" branded two door refrigerator at 41°F. Observed tuna salad, chicken salad, sliced tomatoes, deli ham, and deli turkey all in top section of sandwich in-line refrigerator between 40-41°F. Observed seafood salad and tuna salad both in cabinet section of unit at 41°F. Observed raw hamburger patties and raw chicken both in two drawer refrigerator at 41°F. Observed pepperoni, sliced tomatoes, and sliced sausage all in top section of pizza in-line refrigerator at 41°F. Observed marinara sauce in table-top hot holding unit at 154°F. Observed quaternary sanitizer in three bay sink at 200ppm. Testing strips available. Observed foods in single-door freezer to be frozen solid. Discussion Observed hood sticker in compliance, next service due in January 2024 . Closing Violations marked "Verified" have been corrected. Violations not marked "Verified" remain uncorrected. Uncorrected violations are to be corrected immediately. Uncorrected violations may result in additional Re-inspections and fees, fines and or administrative action including possible suspension of permit.
