Verified 12/15/23 OBSERVATION: Observed knife being stored in bucket containing sanitizer
adjacent to cook's line. Discussed with PIC that this is not an approved
method of storing utensils in between uses. Discussed proper storage
methods with PIC.
**RE-INSEPCTION** OBSERVED UTENSILS BEING STORED DRY IN BETWEEN USES AT
TIME OF RE-INSPECTION.
3-301 .12 REGULATION: Item 43 In - use utensils properly stored -- In-Use Utensils,
Between-Use Storage
Verified 12/15/23 OBSERVATION: Observed top of warewashing machine with accumulation of food
particles and residues. PIC to ensure exterior of machine is cleaned at a
frequency necessary to decrease accumulations.
**RE-INSPECTION** OBSERVED TOP OF WAREWASHING MACHINE TO BE CLEAN AT TIME
OF RE-INSPECTION.

Verified 12/15/23 OBSERVATION: Observed containers originally containing yogurt being used
to store chopped onions. PIC to ensure foods are only stored in approved
food containers and pans.

Characteristics-Materials for Construction and Repair
In Compliance Observed salads, cut cantaloupe, and hummus all in "Atosa"
branded two door refrigerator at 41°F. Observed chopped tomatoes, fresh
feta cheese, and baba ghanoush all in top section of in-line refrigerator
closest to entrance to kitchen at 39°F. Observed vegetarian grape leaves
in four drawer refrigerator under unit at 41°F. Observed rice and
chicken, rice, vegetable soup both in top section of additional in-line
refrigerator between 40-41°F. Observed beef stuffed grape leaves in four
drawer refrigerator under unit at 41°F. Observed uncooked stuffed peppers
and cut tomatoes both in "True" branded single-door refrigerator at 41°F.
Observed grape leaves and raw lamb both in walk-in refrigerator at 40°F.
Observed rice and stuffed peppers both in table-top hot holding unit at
138°F and 136°F respectively. Observed quaternary sanitizer and testing
strips available. Observed high-temperature warewashing machine operating
at 168. E°F via inspector's dish plate thermometer. Testing strips
available. Observed foods in freezer units to be frozen solid.
Discussion Observed hood sticker in compliance, next service due in
April 2024 .
Closing Violations marked "Verified" have been corrected. Violations not marked
"Verified" remain uncorrected. Uncorrected violations are to be corrected
immediately. Uncorrected violations may result in additional
Re-inspections and fees, fines and or administrative action including
