DESCRIPTION OF VIOLATION

OBSERVATION: Observed ice machine with slight accumulation of what appears
to be pink mold around chute area. PIC to ensure machine is emptied,
cleaned, and sanitized.

Repeat OBSERVATION: No disposable paper towels available at handwashing sink
adjacent to dish machine at time of inspection. PIC to ensure paper
towels are supplied at handwashing sink at all times for proper hand
drying.

Correct On Site OBSERVATION: Observed cooked potatoes sitting out of temperature control
at 80°F. Upon discussion of keeping foods in temperature control,
employee voluntarily placed container of cooked potatoes in walk-in
refrigerator during time of inspection.

OBSERVATION: Observed large portion of potatoes in the process of cooling
in walk-in refrigerator. Discussed proper cooling methods with PIC.

Repeat OBSERVATION: Observed droppings consistent with mice on dry storage
shelves in storage room and on shelf containing dishes adjacent to ice
machine. No droppings observed on FCS (food contact surfaces) . Observed
latest pest control report from Frank' s Defense Pest Control dated
12/19/2023. PIC to ensure surfaces containing droppings are cleaned and
sanitized.

Repeat OBSERVATION: Observed cabinet section of in-line refrigerator behind front
counter with accumulation of food particles and spills. PIC to ensure
interior of unit is cleaned at a frequency necessary to decrease such
accumulations.

Surfaces
In Compliance Observed diced tomatoes and diced ham both in top section of
in-line refrigerator at 41°F. Observed containers of corned beef hash and
sausage links both in container of ice at 41°F. Observed cut cantaloupe
and pasta both in walk-in refrigerator at 41°F. Observed high-temperature
warewashing machine operating at 160°F via temperature testing strips.
Observed quaternary sanitizer tablets and testing strips available.
Observed foods in freezer units to be frozen solid.
Discussion Observed hood sticker in compliance, next service due in
March 2024 .
