PIC to ensure employees eat, drink, and use tobacco only in designated areas where the contamination of exposed food, clean equipment and utensils or single-use articles can not result. 2-401 .11 REGULATION: Item 06 Proper eating, tasting, drinking, tobacco use -- Eating, Drinking, or Using Tobacco Repeat OBSERVATION: Observed sliced tomatoes at 50°F and diced tomatoes at 45OF both in top rail of sub / salad in line refrigerator. Reviewed cold holding requirements with PIC. PIC voluntarily discarded foods during inspection. PIC to routinely monitor temperatures with food thermometer ensuring TCS foods are maintained at 41OF or below. **RE-INSPECTION** OBSERVED DICED TOMATOES AT 44OF AND SLICED TOMATOES AT 470F BOTH IN TOP RAIL OF SUB / SALAD IN LINE REFRIGERATOR. PIC RELOCATED ELEVATED FOODS TO WALK IN REFRIGERATOR DURING THE INSPECTION. PIC TO ROUTINELY MONITOR TEMPERATURES WITH FOOD THERMOMETER ENSURING TCS FOODS ARE MAINTAINED AT 41°F OR BELOW. 3-501 .16 (A) (2) (B) -P REGULATION: Item 22 Proper cold holding temperature -- Holding TCS Food, Cold Verified 05/02/24 OBSERVATION: PIC states using time as a public health control (TPHC) for roast beef. PIC unable to provide TPHC procedure or method for identifying the time that is 4 hours past the point in time when the food was removed from temperature control. Reviewed with PIC that unmarked foods are considered unsafe for consumption. Reviewed compliance responsibilities with PIC. Provided PIC with TPHC sample procedure. PIC to ensure TPHC procedure is followed in compliance. **RE-INSPECTION** OBSERVED TPHC PROCEUDRE POSTED AND TIME LOGS MAINTAINED IN COMPLIANCE. 3-501 .19-Pf REGULATION: Item 24 Time as a Public Health Control -- Time as a Public Health Control Verified 05/02/24 OBSERVATION: Observed unlabeled spray bottle holding what PIC identified as cleaner. PIC to ensure all working containers holding chemicals are labeled with the common name of the chemical. **RE-INSPECTION** OBSERVED WORKING SPRAY BOTTLES LABELED WITH THE COMMON NAME OF THE CHEMICAL. 7-102 .11-Pf REGULATION: Item 28 Toxic substances properly identified, stored and used -- Common Name-Working Containers Verified 05/02/24 OBSERVATION: Observed employees preparing foods without hair restraints. PIC to ensure all employees wear compliant hair restraints such as a hat or hair net while preparing food. **RE-INSPECTION** OBSERVED EMPLOYEES WEARING COMPLIANT HAIR RESTRAINTS WHILE HANDLING FOOD. 2-402 .11 REGULATION: Item 40 Personal cleanliness -- Hair Restraints Discussion Drawer freezer not in use, PIC states freezer is not working. PIC to provide health office with repair slip once repairs are complete. **RE-INSPECTION** PIC STILL WAITING FOR REPAIRS TO BE COMPLETED ON DRAWER FREEZER. PIC to obtain current food permit and display in public view adjacent to the CFPM certificate. **RE-INSPECTION** PIC TO OBTAIN CURRENT FOOD PERMIT AND DISPLAY IN COMPLIANCE. Discussion Hood sticker dates 12/27/2023, in compliance. In Compliance Observed bucket of QAC sanitizer measure 200 ppm via PIC's test strips . Observed marinara sauce in hot holding at 146°F; chicken salad in cabinet of sub / salad in line refrigerator at 41°F; egg wash in drawer of seafood refrigerator at 40°F; caramelized onions in drawer refrigerator below grill at 35°F; spaghetti in walk in refrigerator at 41°F; pizza sauce in top rail of pizza in line refrigerator at 40°F. Closing Violations marked "Verified" have been corrected. Violations not marked "Verified" remain uncorrected. Uncorrected violations are to be corrected immediately. Uncorrected violations may result in additional Re-inspections and fees, fines and or administrative action including possible suspension of permit.
