Upon discussion of cold holding requirements with employee, employee returned rice pilaf to refrigerator during time of inspection. **RE-INSPECTION** NO TCS FOODS SITTING OUT OF TEMPERATURE CONTROL AT TIME OF RE-INSPECTION. 3-501 .16 (A) (2) (B) -P REGULATION: Item 22 Proper cold holding temperature -- Holding TCS Food, Cold Verified 01/08/24 OBSERVATION: Observed cooked chicken fingers sitting out of temperature control adjacent to fryers that employees state are in the process of cooling between 75-80°F. Observed coleslaw and sliced cheese both in cabinet section of unit at 41°F. Observed sliced sausage and pepperoni both in top section of pizza in-line refrigerator at 39°F. Observed cooked chicken tenders in cabinet section of unit at 41°F. Observed raw haddock and cooked chicken wings both in walk-in refrigerator at 41°F. Observed cheese pizza in table-top hot holding unit at 138°F. Observed marinara sauce in table-top hot holding unit at 154°F. Observed low-temperature warewashing machine dispensing between 50-100ppm of bleach sanitizer via inspector's testing strips. Observed foods in freezer units to be frozen solid. Discussion Observed hood sticker in compliance, next service due later this month. Closing Violations marked "Verified" have been corrected. Violations not marked "Verified" remain uncorrected. Uncorrected violations are to be corrected immediately. Uncorrected violations may result in additional Re-inspections and fees, fines and or administrative action including possible suspension of permit.
