Verified 01/08/24 OBSERVATION: No disposable paper towels available at handwashing sink
closest to three bay sink upon arrival to inspection. PIC to ensure
handwashing sinks are supplied with paper towels at all times for proper
hand drying.
**RE-INSPECTION** PAPER TOWELS AVAILABLE AT HANDWASHING SINK MENTIONED
ABOVE AT TIME OF RE-INSPECTION.

Verified 01/08/24 OBSERVATION: No handwashing soap available at handwashing sink to left of
front counter at time of inspection. PIC to ensure handwashing soap is
provided at handwashing sinks at all times for proper hand washing.

Verified 01/08/24 OBSERVATION: Observed container of raw chicken stored above cooked chicken
in four drawer refrigerator under flat-top grill at time of inspection.
Discussed food storage hierarchy with PIC.

Verified 01/08/24 OBSERVATION: Observed container of rice pilaf sitting out of temperature
control on prep table across from grill between 58-59°F. Upon discussion
of cold holding requirements with employee, employee returned rice pilaf
to refrigerator during time of inspection.

OF RE-INSPECTION.

Verified 01/08/24 OBSERVATION: Observed cooked chicken fingers sitting out of temperature
control adjacent to fryers that employees state are in the process of
cooling between 75-80°F. Upon discussion of proper cooling methods,
employee placed chicken fingers in walk-in refrigerator to continue
cooling process.

RE-INSPECTION.

OBSERVATION: Observed expired bleach sanitizer testing strips at time of
inspection. PIC to obtain new testing strips to accurately test
concentration of sanitizer.
**RE-INSPECTION** PIC UNABLE TO LOCATE BLEACH SANITIZER TESTING STRIPS AT
TIME OF RE-INSPECTION. WILL VERIFY COMPLIANCE AT NEXT ROUTINE INSPECTION.

In Compliance Observed tuna salad, sliced tomatoes, and deli ham all in top
section of in-line refrigerator behind front counter at 41°F. Observed
coleslaw and sliced cheese both in cabinet section of unit at 41°F.
Observed sliced sausage and pepperoni both in top section of pizza
in-line refrigerator at 39°F. Observed cooked chicken tenders in cabinet
section of unit at 41°F. Observed raw haddock and cooked chicken wings
both in walk-in refrigerator at 41°F. Observed cheese pizza in table-top
hot holding unit at 138°F. Observed marinara sauce in table-top hot
holding unit at 154°F. Observed low-temperature warewashing machine
dispensing between 50-100ppm of bleach sanitizer via inspector's testing
strips. Observed foods in freezer units to be frozen solid.
Discussion Observed hood sticker in compliance, next service due later
this month.
Closing Violations marked "Verified" have been corrected. Violations not marked
"Verified" remain uncorrected. Uncorrected violations are to be corrected
immediately. Uncorrected violations may result in additional
Re-inspections and fees, fines and or administrative action including
