PIC to ensure foods are packaged in a way that the integrity of food is protected from potential contamination and tampering. 3-202 .15-Pf REGULATION: Item 13 Food reviceived in good condition, safe, and unadulterated -- Package Integrity Repeat OBSERVATION: No HACCP plan for ROP (reduced oxygen packaging) available at time of inspection. PIC to ensure copy of HACCP plan is readily available for review during inspections. **RE-INSPECTION** NO COPY OF HACCP PLAN FOR ROP AVAILABLE AT TIME OF RE-INSPECTION. REVIEWED WITH PIC TO ENSURE COPY OF HACCP PLAN IS AVAILABLE FOR REVIEW. WILL VERIFY COMPLIANCE AT 2ND RE-INSPECTION. 8-103.12-Pf REGULATION: Item 29 Compliance with variance / specialized process / HACCP plan -- Conformance with Approved Procedures OBSERVATION: Observed ROP raw salmon in open-face refrigerator that PIC states is delivered to establishment frozen and is then thawed and packaged in ROP on site and is kept refrigerated until sold. PIC to cease and desist packaging raw salmon in ROP and contact health office for review. **RE-INSPECTION** OBSERVED ROP RAW SALMON FILETS IN OPEN-FACE REFRIGERATOR AT TIME OF RE-INSPECTION THAT PIC STATES ARE DELIVERED FRESH TO ESTABLISHMENT. PIC TO CEASE AND DESISIT PACKAGING RAW SALMON IN ROP AND CONTACT HEALTH OFFICE FOR COMPLIANCE RESPONSIBILITIES. WILL VERIFY COMPLIANCE AT 2ND RE-INSPECTION. 3-502 .12-P REGULATION: Item 29 Compliance with variance / specialized process / HACCP plan -- Reduced Oxygen Packaging, Criteria In Compliance Observed packaged raw meats and assorted prepared foods all in open-face refrigerator at 41°F. Observed commercially pre-packaged cheeses and meats in additional open-face refrigerator at 41°F. Observed foods in freezer units to be frozen solid. ***2ND RE-INSPECTION HAS BEEN SCHEDULED. ALL OUTSTANDING VIOLATIONS TO BE CORRECTED. *** Closing Violations marked "Verified" have been corrected. Violations not marked "Verified" remain uncorrected. Uncorrected violations are to be corrected immediately.
