PIC to ensure handwashing sinks are supplied with paper towels at all times . **RE-INSPECTION** PAPER TOWELS SUPPLIED AT ALL HANDWASHING SINKS IN KITCHEN AT TIME OF RE-INSPECTION. 6-301 .12-Pf REGULATION: Item 10 Adequate handwashing sinks properly supplied and accessible -- Handwashing Drying Provision Verified 01/08/24 OBSERVATION: Observed thawed salmon filets in ROP bearing label indicating to remove filets from ROP prior to thawing. PIC voluntarily discarded filets during time of inspection. **RE-INSPECTION** OBSERVED SALMON FILETS THAWING PROPERLY AT TIME OF RE-INSPECTION. 3-501 .13 REGULATION: Item 35 Approved thawing methods used -- Frozen, Thawing Verified 01/08/24 OBSERVATION: Observed deli slicer with slight accumulation of food particles on back of blade. PIC states slicer was last used over 24 hours ago. PIC to ensure slicer is thoroughly cleaned and sanitized after each use. 4-601 .11 (A)-Pf REGULATION: Item 16 Food contact surface; cleaned and sanitized -- Equipmnet Cleaning FCS and Non-FCS OBSERVATION: Observed top of warewashing machine with accumulation of food particles and soil residues. PIC to ensure top of machine is cleaned at a frequency necessary to decrease such accumulation. **RE-INSPECTION** OBSERVED TOP OF WAREWASHING MACHINE WITH ACCUMULATION OF FOOD PARTICLES AND SOIL RESIDUES. PIC STATES INTENTION TO CLEAN TOP OF MACHINE. WILL VERIFY COMPLIANCE AT NEXT ROUTINE INSPECTION. 4-602 .13 REGULATION: Item 49 Non - food contact surfaces clean -- Nonfood Contact Surfaces Discussion Discussed with PIC to shorten detergent and sanitizer hoses at three bay sink so that they do not become submerged in solution below allowing for potential contamination of solution from hose. **RE-INSPECTION** OBSERVED SHORTENED DETERGENT AND SANITIZER HOSES AT THREE BAY SINK AT TIME OF RE-INSPECTION. In Compliance Observed sliced deli turkey and raw ground beef patties both in "True" branded two door refrigerator at 40°F. Observed tuna salad, sliced tomatoes, and sliced deli turkey all in top section of in-line refrigerator at 41'F. Observed egg salad and sliced tomatoes both in cabinet section of unit at 40°F. Observed cocktail shrimp, salsa, and sliced cherry tomatoes all in walk-in refrigerator at 41°F. Observed fried and scrambled eggs both in steam table at 139°F and 164°F respectively. Observed quaternary sanitizer in three bay sink at 200ppm via readily available testing strips. Observed high-temperature warewashing machine operating at 160°F via dish plate thermometer. Observed foods in freezer units to be frozen solid. Discussion Observed hood sticker in compliance, next service due in May 2024 .
