PIC relocated eggs during the inspection. PIC to ensure raw animal foosds are properly stored in equipment to prevent cross contamination. 3-302 .11-P REGULATION: Item 15 Food separated and protected -- Packaged and Unpackaged Food-Separation, Packaging, and Segregation OBSERVATION: Observed container of sanitizer attached to low temperature dish machine that was empty. Employee supplied new sanitizer during the inspection but after running multiple cylcles, observed low temperature dish machine dispense sanitizer at 0 ppm via PIC's test strips. PIC to call repair service if needed and provide health office with status or repair slip within 24 hours. PIC to use three compartment sinks for sanitizing until dish machine is in good repair. 4-501 .114-P REGULATION: Item 16 Food contact surface; cleaned and sanitized -- Warewashing Chemical Sanitization-Temperature, pH Concentration OBSERVATION: Observed American chop suey at 43-44°F and meatloaf dinner 49°F both in open face refrigerator at point of sale. PIC to determine source of elevated temperatures. PIC to rapidly cool foods and routinely monitor temperatures with food thermometer ensuring TCS foods are maintained at 41°F or below. 3-501 .16 (A) (2) (B) -P REGULATION: Item 22 Proper cold holding temperature -- Holding TCS Food, Cold OBSERVATION: No allergen statement observed on menus / point or sale at deli counter or ice cream counter. PIC to ensure statement is included on all menus / point of sale as follows, "Before placing your order, please inform your server if a person in your party has a food allergy" . 590.011.2 REGULATION: Item 58 Allergen Awareness (509.011) -- Statement Discussion Observed special events and catering tent during inspection, spaces not in use during the inspection. PIC states third party caterers will hot and cold hold foods on food trucks . Utensils and other food contact surfaces are rented via third party distributor and cleaned and sanitized off site. Closing Correct Priority Item and Priority Foundation Item violations immediately; Core Item violations within 10 days. Correct all violations in entirety and maintain. Train and supervise staff. In Compliance Observed QAC sanitizes in labeled bucket measure 200 ppm via inspector' s test strips. Observed pizza sauce in walk in refrigerator at 40°F; ham cheese quiche in glass display refrigerator at 41OF sausage patties in top rail of in line refrigerator at 39°F; sliced turkey in "Pepsi" refrigerator at 390F; mashed potatoes in two door refrigerator in retail area at 38°F.
