PIC to contact health office regarding current food permit and display copy in public view adjacent to the certified food protection manager (CFPM) certificate. Discussion PIC to display copy of CFPM certificate and allergen awareness training certificate in public view adjacent to the current food permit. Discussion PIC and inspector calibrated their food thermometers during the inspection using the ice point method. Both thermometers read 32°F. OBSERVATION: Observed large portion of handwashing signage at hand sink adjacent to point of sale obstructed by paper towel dispenser. PIC to ensure all hand sinks are supplied with handwashing signage that is visible. 6-301 .14 REGULATION: Item 10 Adequate handwashing sinks properly supplied and accessible -- Handwashing Signage Repeat OBSERVATION: Observed sliced roast beef in top rail of sandwich in line refrigerator at 54°F. PIC states roast beef was cut a few minutes prior to inspection. PIC to ensure foods that were recently prepared are placed in rapid cooling equipment to ensure they are cooled within time and temperature parameters. 3-501 .15-Pf REGULATION: Item 33 Proper cooling methods used; adequate equipment for -- Cooling Methods OBSERVATION: Observed working containers of flours and spices without labels. PIC to ensure all easily mistakable foods taken from bulk supplies and placed into working containers are labeled with the common name of the food. 3-302 .12 REGULATION: Item 37 Food properly labeled : original container -- Bulk Containers, Food Labels OBSERVATION: Observed multiple employees preparing foods without wearing hair restraints. PIC to ensure all employees wear compliant hair restraints such as a hair net or hat while preparing foods. 2-402 .11 REGULATION: Item 40 Personal cleanliness -- Hair Restraints OBSERVATION: Observed multiple containers of food stored directly on floor in the walk in freezer. PIC to ensure foods are stored at least 6 inches above the floor. 3-305.11 REGULATION: Item 39 Contamination prevented during food preparation, storage and display -- Storage, Food-Preventing Contamination from the Premises OBSERVATION: Observed allergen statement on digital menu that does not match wording in the Food Code. PIC to include statement, "Before placing your order, please inform your server if a person in your party has a food allergy" . PIC to ensure statement is easily visible and provided on all menus . 590.011.2 REGULATION: Item 58 Allergen Awareness (509.011) -- Statement Discussion Hood sticker dates 6/12/2024, in compliance. Observed slices of cheese pizza in warmer at 140°F; marinara sauce in table top warmer at 164°F; sliced tomatoes in top rail of sandwich in line refrigerator at 40°F; turkey in glass single-door refrigerator at 41°F; cooked beef in cabinet of pizza in line refrigerator at 390F; cooked steak tips in walk in refrigerator at 40°F.
