Discussion Posted food permit observed with an expiration date of
2/28/2023 . Permit holder to contact health office regarding current food
permit status and obtain physical copy. Permit holder to ensure the
current food permit is displayed in public view adjacent to the certified
food protection manager (CFPM) certificate.
**RE-INSPECTION** OBSERVED CURRENT FOOD PERMIT POSTED IN COMPLIANCE.
OBSERVATION: Employees unable to verify an assigned person in charge (PIC)
during the inspection. Employee states there is not a PIC on site for the
2nd shift. Permit holder to ensure there is an assigned PIC on site at
all times and ensures they are performing their duties specified under
Food Code 2-103.11.
**RE-INSPECTION** EMPLOYEES UNABLE TO VERIFY AN ASSIGNED PIC ON SITE
DURING THE INSPECTION. PERMIT HOLDER TO ENSURE THERE IS A PIC ON SITE AT
ALL TIMES.

Verified 01/06/25 OBSERVATION: Observed turkey sausage patties at 57°F and scrambled egg
burrito filling at 42-43°F both in top right drawer of in line
refrigerator. Reviewed cold holding requirements with employees. Permit
holder to ensure TCS foods are maintained at 41°F or below by routinely
monitoring temperatures with their food thermometer. Employees to rapidly
cool foods.
**RE-INSPECTION** OBSERVED TURKEY SAUSAGE PATTIES AT 38OF AND SCRAMBLED
EGG BURRITO FILLING AT 41OF BOTH IN TOP RIGHT DRAWER OF IN LINE
REFRIGERATOR.

Verified 01/06/25 OBSERVATION: Observed employee wearing watch on their wrist while
preparing foods. Permit holder to ensure employees do not wear jewelry on
their arms or hands while preparing food. Reviewed with employees that
the only compliant jewelry to be worn during food preparation is a plain
banded ring.

Verified 01/06/25 OBSERVATION: Observed permit holder's QAC sanitizer test strips with an
expiration date of 11/30/2024. Permit holder to supply un-expired QAC
sanitizer test strips.

Verified 01/06/25 OBSERVATION: Observed bottom right drawer of in line refrigerator in poor
repair and unable to fully close. Reviewed with employees that drawer
could potentially be attributing to elevated temperatures. Permit holder
to ensure equipment is maintained in good repair using approved methods
and materials.

In Compliance Observed QAC sanitizes in three compartment sink measure 200
ppm via inspector's test strips. Observed egg patties in hot holding
drawer at 145°F; sausage patties in top rail of in line refrigerator at
40°F; sliced cheese in "Delfield" refrigerator at 40°F; sliced cheese in
walk in refrigerator at 38°F.
Closing Violations marked "Verified" have been corrected. Violations not marked
"Verified" remain uncorrected. Uncorrected violations are to be corrected
immediately. Uncorrected violations may result in additional
Re-inspections and fees, fines and or administrative action including
