Permit holder to ensure there a PIC on site at all times and ensures they perform their duties specified under FC 2-103.11. 2-101 .11-Pf REGULATION: Item 01 PIC present, demonstrates knowledge, and perform duties -- Assignment PIC OBSERVATION: Observed employee packaging cookies while not wearing a hair restraint. Permit holder to ensure all food employees wear a compliant hair restraint such as a hat or hair net while handling exposed food, clean equipment, utensils, and linens and unwrapped single-service articles . 2-402 .11 REGULATION: Item 40 Personal cleanliness -- Hair Restraints OBSERVATION: Observed ice cream scoops stored in buckets stored inside turned off dip well. Per discussion with employee, they state dip wells are not in use due to leaking and scoops are stored in sanitizer between uses. Reviewed with employee that storing utensils between uses in sanitizer is not approved. Permit holder to develop compliant method to store in-use utensils in compliance specified under FC 3-304.12. 3-301 .12 REGULATION: Item 43 In - use utensils properly stored -- In-Use Utensils, Between-Use Storage Closing Correct Priority Item and Priority Foundation Item violations immediately; Core Item violations within 10 days. Observed milk in low swinging refrigerator at point of sale at 38°F; "Atosa" refrigerators holding cookie dough operating at 32-37°F.
