DESCRIPTION OF VIOLATION

Discussion Observed posted food permit near pharmacy with an expiration
date of 3/1/2024 . PIC to contact the health office regarding their
current food permit status and obtain a physical copy. PIC to ensure the
current food permit is posted adjacent to the certified food protection
manager (CFPM) certificate.
Discussion Observed hand sink adjacent to the three compartment sink
with handwashing signage and empty liquid soap dispensers and empty paper
towel dispensers. PIC states they are no longer using that sink as a
handwashing sink. PIC to remove handwashing sink required items.
OBSERVATION: Inspector unable to verify if food employees are trained on
their responsibility to report focdbcrne illness symptoms and other
medical diagnoses to the PIC. Reviewed compliance responsibilities with
PIC. Provided PIC with employee illness agreement document during the
inspection.

OBSERVATION: Observed wiping cloth stored in labeled bucket of QAC
sanitizer that measured well above 400 ppm via PIC's test strips.
Reviewed compliance responsibilities with PIC. PIC to ensure wiping
cloths are stored between uses in compliant concentrations of sanitizer.

OBSERVATION: Observed ice cream scoops stored in water at 127-132°F.
Reviewed with PIC that if in-use utensils are stored in water between
uses, that the water must be maintained at 135OF or above.

OBSERVATION: PIC unable to provide an irreversible temperature measuring
device during the inspection. Reviewed examples with PIC, including 160OF
sensor stickers, and dish plate thermometers. PIC to obtain and routinely
monitor utensil surface temperatures.

Discussion Observed multiple packages of "Hogan Brothers Coffee" for
retail sale with "best if used by dates" dating 8/31/22, 10/12/22, and
10/7/23. Reviewed with PIC it is best practice to routinely monitor use
by dates of packaged foods.
Closing Correct Priority Item and Priority Foundation Item violations immediately;
Core Item violations within 10 days. Correct all violations in entirety
and maintain. Train and supervise staff. Failure to correct all
violations and maintain corrections may result in administrative action

In Compliance Observed high temperature dish machine achieve a utensil
surface temperature of 163.4°F via inspector' s dish plate thermometer.
Observed gallons of milk in retail refrigerator at 40°F; half and half in
top rail of the in line refrigerator at 35°F.
