Have all operators' sign the signature page found at the end of this manual. • Failure to read and adhere to the following important instructions could result in SERIOUS BODILY INJURY. 1. Do not operate this machine until it has been inspected and made ready for operation by an authorized-representative. 2. Do not touch moving parts. 3. Do not operate or work around this machine with loose fitting clothing. It could become entangled in the machine. 4. Never try to manually stop the tumbler. Always wait until the machine has completely stopped before trying to manipulate a position change. 5. WARNING Failure to properly ground this machine could result in electrical shock. Only a qualified electrician, who is familiar with the appropriate electrical codes should provide the proper electrical connection. 6. DO NOT alter or modify this DVTS-200 in any way from its original form. Allow only an authorized installer to service your machine. 7. Always tum off the machine when it is not in use. 8. Unplug the machine from the power source before removing the hood cover for maintenance or making adjustments to the machine. 9. Always operate on a level surface. 1 10. Keep unauthorized personnel away from the machine. 11. DO NOT remove the safety bar. When up (90° position) machine will not run. 12. The DVTS tumbler models are designed to handle vacuum NOT pressure. AS A PRECAUTION DO NOT PUT ANYTHING IN THE CHAMBER WHICH WOULD GENERATE A PRESSURE SUCH AS CARBON DIOXIDE, SNOW OR PELLETS. 13. Install the machine in a position that provides adequate space to allow safe clearance of any personnel in the area. THIS AREA SHOULD BE DRY TO AVOID PULLING MOISTURE INTO THE VACUUM PUMP. * CAUTION: Do not operate tumbler drive with vacuum hose connected to drum. * CAUTION: Stay clear of moving parts! 1. Move the toggle switch on the dart control to "off". Plug machine lead cord into a proper electrical outlet that is grounded. 2. With the safety bar in the up position, turn the timer on by pushing up the cycle timer toggle to the run position. Four columns of red numbers will be displayed. The timer has three programming modes: Run time, pause (reset time) and number of cycles. a) RUN TIME: Press "set" key until the display reads "set 1" or (set 1). This is the running time mode. Press the "set" key again, one time only! The digital display will change to numbers. The two digital columns on the right represent minutes, the two on the left represent hours. Change the time value by using the "arrow" keys. Change from minutes to hours by using the :side pointing arrow key. Only the value of the flashing digit can be changed. This procedure sets the time the tumbler runs. Press the "enter' key after you have displayed the desired run time. b) PAUSE, (RESET)TIME: Press the set key again, the digital display will show "set 2" or (set 2). Press "set" key again and the digital display will show four columns of numbers. Once again, Y Y your you must use the arrow keys to set the time. If product 9 does not require e a rest cycle, you would program this to read 0001 A one must be programmed in this cycle! (means one cycle and stop) After correct display is shown, then press the "enter" key. c) NUMBER OF CYCLES: The last mode is for the number of times you want the tumbler to start and stop. Press the "set" key again. This time the digital display will show the letters (<Pet), which means repeat. Press the "set" key again and numbers will appear. Change these numbers with the "arrow" keys until the desired number is reached. Press"enter" when you have selected the correct number of cycles you 5 want the tumbler to start and stop. Example: 0003 will repeat the program three times. 3. Next, select the toggle switch on the dart controller to forward or reverse. Set the dart speed control to desired speed (between 1-10). Lower the safety bar. Press the cycle toggle to the start position to begin the tumbler programmed cycle. THERE IS A RED LIGHT JUST UNDER THE DIGITAL,NUMBER DISPLAYED.. IF THE RED LED LIGHT IS ON THE LEFT SIDE OF THE DISPLAY, THE UNIT IS IN THE RUN MODE. IF THE RED LED LIGHT IS ON THE RIGHT, IT MEANS THE UNIT IS ON THE PAUSE OR REST MODE. IF YOU WISH TO PROGRAM THE TUMBLER WITH THE SAME RUN TIMES FOR YOUR NEXT BATCH, SIMPLY PRESS THE "RESET" (RST) BUTTON. A CAUTION CAUTION: NEVER REVERSE THE DRUM ROTATION OF THE MACHINE WITHOUT FIRST COMPLETELY STOPPING THE MACHINE. SERIOUS DAMAGE MAY RESULT TO THE TUMBLER DRIVE UNIT. 1. Start the-tumbler drum by pressing the start switch. 2. When the lid on the tumbler drum is in the up position stop rotation by pressing the stop button. 3. Raise the safety bar to its vertical position over the tumbler drum. 4. Open the lid by first rotating the swing bolts counterclockwise to unlatch lid until the lid becomes loose then open vacuum valve.. 5. Remove the lid and hang on lid hanger:provided. 6. Add the desired product. CAUTION: DO NOT OVERLOAD TUMBLER DRUM 7. Reverse the procedure to close the lid. 6 8. Pull'the vacuum hose out of the front slot and remove the cap. Place the hose on the vacuum valve. (Open is when the handle is in line with the hose). CAUTION: BEFORE CONNECTING THE VACUUM PUMP TO THE VALVE, MAKE SURE THAT NO LIQUIDS OR SOLIDS ARE PRESENT IN.THE VACUUM VALVE OR ASSOCIATED FITTINGS. THIS AREA SHOULD BE DRY TO AVOID PULLING MOISTURE INTO THE VACUUM PUMP. FILTER MUST BE IN LINE BEFORE USING. CHANGE FILTER IF START UP VACUUM PRESSURE READS MORE THAN —7 INCHES OF VACUUM ON GAUGE. 9. Turn the vacuum pump switch to ":start" and allow the pump to pull the vacuum down to required product vacuum. See chart on vacuum settings in the back of manual. Close the vacuum valve (move the handle at a right angle to vacuum hose). Remove the hose and replace the cap. A CAUTI O N CAUTION: DO NOT OPERATE TUMBLER DRIVE WITH VACUUM HOSE CONNECTED TO TUMBLER DRUM. ALLOW THE VACUUM PUMP TO RUN AN ADDITIONAL 5 MINUTES AFTER THE HOSE IS DISCONNECTED AND CAP REPLACED. THIS ALLOWS ACCUMULATED MOISTURE IN THE VACUUM TO BE PURGED. 10. Make sure forward or reverse has been selected before starting. Alternate direction of tumbler drum rotation on a daily basis to extend chain and sprocket life. 11. Start the tumbler drum and turn the speed control to the desired speed. Always start and stop the tumbler at minimum speeds when loaded. CAUTION: STAY CLEAR OF MOVING PARTS 12. The tumbler drum will now run until the desired tumble time (as preset on the timer in item 1 above) is reached. 13. Set the tumbler speed at a low RPM and then start to rotate it to the up position in order to remove the lid. Press toggle switch,to jog and rotate. Loosen swing bolt assemblies then open the vacuum valve to release the vacuum and then open the lid as noted in items 3A and 5. 14. Place a meat lug or Daniels' optional dump cart under the tumbler drum to receive the product. 15. Rotate the tumbler, as noted above to position the tumbler opening downward. 16. Raise the safety bar to the vertical position over tumbler drum. 17. Remove the product. 18. Always reduce tumbler drum speed to a minimum RPM for safety and to insure long chain and sprocket life. CLEANING AND SANITATION The vacuum tumbler drum and machine must be cleaned and sanitized daily, and also, when switching from one marinating product to another. HOT WATER IS NOT RECOMMENDED IN THE FIRST STEP AS IT MAY CAUSE THE MYOSIN PROTEIN LEFT OVER FROM THE TUMBLING PROCESS TO DISCOLOR AND BUILD UP ON THE INSIDE SURFACE OF THE DRUM. 1. After removing all excess marinating solution, a sufficient amount of warm water and mild detergent should be poured into the drum to provide a good cleaning action. 2. Fasten lid in position and rotate the drum at full speed for approximately (2) minutes, (Each direction on models with forward and reverse options). 3. Drain the cleaning solution by removing the drain plug or remove the lid and jog the drum with the opening in a downward position. 4. Hang the lid on the lid hanger provided. 5. Wash the inside of the drum with hot soapy water and then rinse with hot water. 6. Always unplug from the power source before continuing the cleaning procedure. 7. The lid gasket should be washed in warm soapy sanitized water and put back on the lid immediately, which will prevent distortion of the gasket. Never set the door with gasket on edge. 8. The outside surface of the machine cabinet and drum should also be wiped down and cleaned. 9. During cleaning of the machine DO NOT DIRECT WATER ON THE CONTROLS. 10. After cleaning and rinsing the tumbler, Rotate by hand (front side down) until the opening is toward the bottom to allow to. drain. 11. After cleaning, the machine should be sanitized with a USDA, FDA approved sanitizer. 12. Other than service to the DVTS-200(Including maintenance and adjustments)the machine should remain connected to the power source. It is flexible, easily programmable and cheap. It is intended to vacuum-pack foodstuffs by removing oxygen as well as any chemical and biological pollutant present in the environment. To attain the vacuum level you wish,just program the machine in order to remove almost all the air contained in the packet. Transport and positioning • When transporting and positioning the machine,it is recommended to handle It with great care! • Neither overturn nor tilt the machine!Oil might come out of the pump and damage the machine. ' Use protection gloves while handling the machine. • ® • LIFT-UP-THE PACKING AND MACHINE WITH A FORKLIFT. Cut the strap(1)with scissors make sure you protect your eyes by wearing glasses and withdraw the cardboard(2). Cut the strap(3)fastening the machine to the pallef(figure 2.1.page 59). 2.2. Environmental conditions • Lift the machine and place it on the working surface. Make sure the machine is placed in a proper environment without any inflammable and explosive materials or gas. Install on a non-combustible material only. • Leave a minimal space of 200mm around the machine so that not to obstruct air outlets. • Once the correct height is abtained,block the machine by means of the wheel brakes. Working environmental-conditions: • Temperature from+5°C to+40°C. • Relative humidity from 30%to 90%, without condensation. The lighting of the operation room shall comply with the laws in force in the country where the machine is installed. However,it shall be uniform and provide forgood visibility in order to safeguard the operator's safety and health. MACHINE SAFETY FACTOR=1P20 THE AERIAL NOISE MADE BY THE MACHINE IS LOWER THAN 70 dB 2.3. Users 2.3.1. Electrical connections • OBSERVE HEALTH AND SAFETY REGULATIONS! • If the machine is not equipped with the power supply plug, use a plug that is suitable for the voltage and amperage values described by the rating plate and that can comply with the rules in force in the A e installation country. • GROUNDING OF THE UNIT IS OBLIGATORY!(figure 2.3.1.page 59). Before executing electrical connetions (13), make sure the mains voltage matches the one on the plate (14) on machine rear and that the ground contact complies with the safety rules in force. In case of doubts about the mains voltage,contact the local public supply Company. 2.3.2. Gas connections Connect gas attachment, in case the machine is equipped with such a device, to the gas cylinder through the proper tube(H) (figure 1.3.page 58). Pressure of gas plant has to be set on about 2 atm., bearing in mind the max. working pressure is 4 atm. If the pressure is not correct,act on the knob of the pressure reducer(R)(figure 1.3.page 58). Use specific gas for food package In compliance with the rules in force about food additives in the country where the machine is used. ANever use gaseous mixtures in presence of oxygen in a percentage higher than the atmospheric one(19•/). 11 Chapter 3. Programme P9 External Vacuum"is composed by 2 modifiable variables only(Vacuum and Extra-Vacuum). PHASE 2=PROGRAMS SELECTION To select the program number,just press the buttons(6)and(7). PHASE 3=VARIABLES PROGRAMMING Press button(4)to enter scheduling of the program shown at the moment.By pressing again button(4),all parameters to the selected program will appear one after the other. Parameters are stored when, while running a program, the number of the program itself will appear on the y disP la . 1) VACUUM Itis"possible to set a-value"from-a to"99,9%. The recommended vacuum percentage is 99,9%. Scheduling of vacuum parameter is signalled through LED(9). 2) EXTRA VACUUM If the vacuum value is set to 99.9%,press button(4)to program the EXTRA VACUUM parameter indicated by the letter E in the last digit on the display. This value can be set to between 0 and 30 seconds. This the length of time that the pump continues to extract air from the hood-after the machine has-reached-the programmed-maximum vacuum-level: This-function is useful for porous- products orousproducts where it is particularly difficult to extract the air(e.g.meat). NO: if the programmed VACUUM value is less than 99.9%, the EXTRAVACUUM function is not displayed, and the system proceeds to the subsequent parameter(GAS). 3 GAS It is possible to set a value from 0 to 99%. Such a parameter cannot be higher than the vacuum one, otherwise you will obtain an opposite function. Scheduling of gas parameter is signalled through LED(10). If the gas LED(10)is flashing,it means the gas cylinder is not properly connected and machine will not start.Connect it properly. N.B.: When scheduling a program `vac + gas", the minimum residual vacuum percentage soon after gas immission should be higher than 60%. Example: VAC 99,9% GAS 40% Residual vacuum (99,9-.40)=59,9% 4) SEALING It is possible to set a value from 0 to 4 seconds. For the first working cycles it is recommendable to set a sealing time of about 2,5 seconds and then lower it to prevent the teflon tape from burning. Machine adjustment and setting up GB 3.1.Adjustment PHASE 4=EXECUTION Arrange the maz# ur num-ber otsfielves(1"3)-thehood-(14)-rriay-accorrimoda3e according tothe sizes oTthe producTto be packed. Place the envelope inside the hood and on the sealing bar in a way as linear as possible. Try to prevent the envelope from wrinkling. Wrinkles might negatively affect the hermetic seal formed by sealing. Envelopes shall be at least 2 cm beyond the sealing bar(figure 3.t.B page 59). If the 15A5"function is on, the envelope must be positioned with the strip open on the gas nozzle on one side of the sealing bar. Lower the-upper plexiglascover. The packaging cycle will start.It consists of 4 phases(figure 3.1.0 page 59): 1. Suction phase during which all the air contained inside the bell and the bag is sucked. 2. The hood will reach its atmospheric pressure and the upper cover will open again. Machine is ready for a-new packing Gycle.- After every working cycle,on the display will appear a number showing the total cycles being executed. All set-up parameters are stored until they are modified. N.B.:if you press the Stop button (8), the machine will immediately stop sucking and automatically start sealing the pouch. This function will be.used to pack liquid,and hot products,which may start boiling during thevacuum.cycle. ELECTRONIC BOARD FUNCTIONS OIL: When you read OIL on the display,do check oil level and colour like mentioned at chapter 7.6. Set to 0 the function pressing buttons(6)and(7)at the same time. OFF. When you read OFF on the display,it means that card is shutdown. Do get in contact with the assistance service. Chapter 4. Limits and conditions in the use of machine GB 4.1. Items not to be packed It is absolutely forbidden to pack the following products which might permanently damage the machine and harm operator. • Liquids of any type and density in fragile containers • Inflammable and explosive materials • Gas bottles under pressure or of any type • Bulk or volatile powders(unless a filter is assembled on the pump) Any material and product which might in any way cause the user to be in a dangerous situation and damage the machine. Chapter 5. Pouches features GB 5.1. Pouches to use They may be of different thickness and shall be both airtight and gastight. Itis recommended to refer to the technical and safety sheets of the pouches in use and to observe the corresponding instructions! 13 Chapter 6. Safety standards G/ 6.1. Warnings THE MACHINE CAN NOT BE USED BY UNTRAINED PERSONNEL! Do not touch the sealing blade(16)immediately after sealing.(figure 6.1.A page 60). Danger of burns due to hot blade. Do not touch the vacuum pump(23)just after a working cycle(figure 6.1.B page 60). Possibility of burning due to the high temperature the pump may reach. USE PROTECTION GLOVES! Do not seal if the sealing wire is broken. -Replace it immediately. In case of a power failure during a working cycle when the cover is closed, do not use any tool in order to force its open . Wait for the power supply to be restoredfiure 6.1.0 page 60). 13 Before,any working cycle.make surethat the closing hook(19)will.not prevent the.operator from.closing. the cover correctly(figure 6.1.D page 60). Possibility of breaking the cover. Never use gaseous mixtures in presence of oxygen in a percentage higher than the atmospheric one(19•/). Chapter 7. OrdinarV maintenance GB 7.1. Precautions for ordinary maintenance interventions ORDINARY MAINTENANCE,MUST BE EXECUTED BY QUALIFIED STAFF APPROPRIATELY TRAINED. QBefore any routine maintenance switch the machine off by acting on the main switch and remove the plug from the mains socket Disconnect gas plant. ® It is recommended to use protection gloves during maintenance operations! 7.2. Cleaning of the sealing.bar Use a dry cloth to remove any film residue on the sealing bar(16). Carry out this operation just after any sealing cycle. Residues are still hot and may be easily removed(figure 7.2.page 60). 7.3. Replacement of the Teflon and the sealing blade Before replacing teflon and the sealing blade wait for the machine to be properly cooled. • Remove the sealing bar(16)from its seat(figure 7.3.A-73.B page 60) • Remove the teflon adhesive tape • Unscrew the nuts fastening the blades to each end of the sealing bar • Tighten the new blades.Make sure they are tout enough before blocking them • Use-the-teflon-adhesive-tape to cover the-sealing-blades • Place the sealing bar into its seat. 7.4. Replacement of the cover gasket When the cover gasket(17)is worn out,replace it(figure 7.4.page 61). This will improve the efficiency of the machine and increase its speed rate. Replacement is very easy. After having removed the gasket which has worn out,clean its seat and insert the new gasket in a linear way. Make sure its ends are joined.Leave no-opening which might prevent the product from being properly vacuum=packed: 14 Chapter 7. Ordinary maintenance GB 7.5. Cleaning machine ,13To clean the plexiglas cover(18), clean both the outer and the inner side with water and soap only (figure 7.5.page 61). Never use detergents or solvents which might damage the cover(18)and reduce its transparency as well as its resistance. Boar's Head Deli Meats and cheeses by the pound from the Deli Display case. 3.) Pre-packed marinated meats, chicken breasts and turkey tips prepared by Dom's Marinated Meats in Malden Mass. This company sells its products in 45 stores in eastern Massachusetts and it is USDA certified and inspected. I can bring you examples of their product if you would like to see them. An excellent product that is sold in many stores. I would sell these until we have our HACCP approved. These would be sold from the reach in refrigeration unit. 4.) Pre-packed cheese and charcuterie from the Island display unit. This would get us up and running and allow us to complete our HACCP next week and also hire our new employees and get them certified. Also it would help us in retaining the customers who are looking for deli meats and marinated meats. She gave us a list of things to do and we are working hard to get them all done by Monday. We have done a substantial "deep cleaning" of the entire premises. Also, our new sandwich unit arrived today and we have it in place. However, I wanted you to know that we changed the manufacturer from the one we specified on the Food Plan. I will provide you with a copy of the spec sheet on Friday. When Michelle was here on Tuesday, I asked her what the next steps would be and she said that you would 3 issue a letter that would allow us to purchase our products and place them on the shelves for a final review of the food placements. Michelle was very helpful in telling us how to do the food placements in a way that is safe for the consumer. Susan, we are planning on having our annual Grand Wine Tasting on Saturday September 27th and it would be great if we could have our displays full of product and all of our new employees behind the counters serving the customers. We will forward copies of all certifications as they are received. 2.)We are working with Berger Foods to do a HACCP plan for cryovaced meats and we should have the final plan soon. 3.) Coffin Refrigerator:This will be replaced or removed from service. 4.) Shatter proof lights are installed where Michelle notes. 5.) All Prep table shelves have been raised 6". 6.) 3-Bay Sink area: We had Eco-lab come in and replace the lines for the sanitizer and retrain our manager. We have removed cauling around the 3-bay and re-caulked. 7.) Rusted Metal shelving is being cleaned, rust removed and painted today. So we are close to complete on all of Michelle's items. I would say the biggest missing piece is the HACCP but I will contact Berger and see what we can do to expedite it.
