Dear Mrs. Conboy:
Recently C G & M Construction Company applied to the Town of North Andover
for a Market Basket Bakery remodeling construction permit. In addition to their
application and as per our telephone conversation, I am sending you more detailed
information.
Unlike the previous Yum -Yum Shop the new bakery will be a part of the Market
Basket store. Therefore, all employee's facilities and operations will be an
integrated part of the Market Basket store.
Upon the completion of construction, Market Basket will apply for an Occupancy
Permit as required. However, all issues related to the store's layout and
construction with respect to the State Sanitary Code 105 CMR590 are addressed in
the attached drawings and specifications. They are as follows:
1. Bakery Equipment Layout and Equipment Specifications: See plan
and cut sheets.
2. Structural Elements:
Walls : Ceramic tile in bakery and'xemlite" in storage and cooler
area- hard, smooth plastic sheet finish.
Floor: "Florline" - Epoxy based very hard and durable non -slippery
finish over concrete slab - highly recomended for food preparation
areas.
Ceiling : 2' x 4' Tile with vinyl coating over the entire area.
3. Electrical System: A part of the store's power supply, as per codes
and regulations. All light fixtures are protected with covers.
4. HVAC : A part of the store's system. In addition, the oven and the
fryer have their own vent systems.
5. Fire Suppression System - Covered by the store's sprinklers and in
addition the fryer has its own system.
